What have you eaten today? (Low carb forum)

OMG that recipe sounds fab, thank you for posting.
I dislike coconut and loads of recipes include coconut in some form and this doesn't!!

Next time I am going to try it with one of either tinned pumpkin (which is often actually butternut squash) or grated aubergine, just to see what happens... I think the textures might be absolutely succulent.
 
Oh yes I think aubergine would work really well, please report back

Obviously I'm going to use vegetable oil rather than coconut oil, but I'm still a little nervous of overdoing saturated fats so I might try cold passed rapeseed oil instead of the butter.

Have you tested yourself with proper batter? I find I can tolerate flour (white or wholemeal) better than a lot of other carbs.
 
What have I eaten today far too much and all the wrong things. Found myself in a Tesco cafe at lunch time need I say more.
 

Sadly the milk and the flour in proper batter are out for me.
Yet i am fine with butter and cheese. Go figure, eh?
 
I would LOVE to find a decent LC batter recipe for Toad in the Hole, but am obviously still searching...

When you find one can you let me know. We've had some weird and wonderful yorkshires since starting this way of eating - none of them nice at all.

How about raw beetroot? I used make a chocolate cake which had beetroot in it (from some random Aussie website) - it was absolutely gorgeous.
 
Today:

Brekkie: Half a red grapefruit
Lunch: 50g raspberries and one single really lush medjool date (I couldn't resist)
Dinner: DH is making a chicken and veg curry (aubergine, cauli, green bean) with a side spinach curry and jazzed up cauliflower rice

Haha! Now that would be a PROPER Red Velvet cake, wouldn't it?
 
For Lunch I had 1 slice of ham,1 boiled egg,a small piece of grilled chicken breast(skinless) and half a tin of Napoli tomatoes,

B. Red berries with Greek yoghurt

L. Scrambled egg
50 minutes swimming

D. Chicken leg, cabbage, carrots and onion with gravy.
6 strawberries with yoghurt
 
B Bacon, egg, mushrooms, tomato, all fried
L Celery, cheddar, mortadella
D Courgette ribbon "pasta" fried in coconut oil & butter with shallots, leeks, ginger, garlic, salmon and prawns, steamed broccoli and (me only -- Mrs DeeJay won't have cream) mussels cooked in butter and double cream

I'm still in post watching the election all night tiredness ....

D: frozen Cook meal - only 13g of carbs then ...

around 15/17 (if not more) biscuits with cheese - and then marmite.

If I'm tired I find this the absolute hardest thing in the world to deal with - I'm a comfort eater. Tomorrow will be better, early night soon ...

Snacked on 200g of peanuts from 3.30 onwards I'm a sucker once the pack is open
D: Rib eye steak and salad, 2 glasses gaillac

1.5 litres of water

4pm snack: pork scratchings
D: lamb slow cooked with tomato, courgette, aubergine, olives, garlic and black pepper, followed by a low carb muffin.

Dinner: Rotisserie chicken (lots), salad
Supper: Tiny bag of popcorn
Snack 1: Glass of prosecco
Snack 2: Large Costa decaff black Americano
 
Yesterday:

Breakfast - Bulletproof coffee

Lunch - Beef Jalfrezi with a mountain of green veg

Afternoon snack - 10 almonds

Evening meal - bag of M&S pork scratchings on the way to choir practice. These pork scratchings are great as they're not as overwhelmingly salty as other brands.

Bloods were still a little on the high side yesterday (another very stressful day) but my last reading before bed last night was a respectable 5.6.
 
B: Was at the gym burning cals not adding
L: Kippers 8oz
D: Will be meat balls and konjac, guess there might be wine involved
