What have you eaten today?

Luuuurve celeriac...don't seem to get much for your carbs though!
 
Bf 2 egg omelette
Lunch bullet coffee, 45g coconut oil & 40g butter (still takes a bit of getting used to)
Dinner 2 flat mushrooms with some sort of garlic & herb topping that I can manage to make
Nut ball
No snacks but lots of water -(probably my best day to date for LC)
 
I've stopped posting to this thread every day, because I reckon it must be very boring to read:

Crustless quiche/eggnbacon/green smoothie or bulletproof coffee
70% choc
Brie n scratchings
Meat n veg
Strawbs n cream

Cos 9/10 days that's what I'd write...

But I have to say that it really isn't boring to eat! :)

Dinner, plan a nice rib eye with lovely home made bearnaise sauce (generous amounts) and a salad, yummy
 
Had a nice ribeye steak for lunch too, but fell off the wagon again with a this panna cotta (image from last time as it wasn't so photogenic today)

Walked 2 miles home which included the challenging ascent of Primrose Hill which helped with carb disposal :)

New to celeriac. Made remoulade from a Nigel Slater recipe - delicious! Then tried celeriac mash from The Big Book of Low Carb Recipes - liked it the first time I made it but thought it was yucky the second.

I did it cubed and roasted in an actifry - because it dehydrates you don't seem to get much, but it tastes lovely. I added a little onion powder and rosemary...delish :)
 
I love reading what people eat. It's like eating double helpings, virtually.

Breakfast scrambled eggs
Lunch 12g cheese , nectarine 2/3rds of medium one as that's all that would fit with cheese in pot.
Dinner chicken curry, Gujerati cabbage and carrot , red onion, dollop yogurt, small poppadum and half an onion bajhia.
 
Bf. Branflakes, ss milk and a boiled egg.
lunch. Veg soup, boiled egg.
dinner. Pork chop, peas, butternut squash chips, fried egg.
snack. Only one medium glass of rose :wacky:

I agree! We are planning a curry night for tomorrow. My son has a packet of poppadums. Fortunately there are no carbs or calories in food stolen from a child's plate :woot:
 
Think there was 4.5 g carbs in mine so thought it doable given I leapt on bike afterwards.

It does shrink, doesn't it? Was worried the gratin wouldn't feed two when it came out of the oven but it was very rich and moreish (loads of double cream and a pinch of nutmeg) - deceptively filling.

Chocolate covered macadamia and almonds (I used 1 tsp of stevia with 100% choc on a double boiler the night before)
low carb flax bread with avocado

lunch:
Baked fish fillets with mushrooms
Courgette and tomatoes with olive oil drizzle
Broccoli sautéed with turmeric onions and garlic
Strawberries, blueberries banana
Cashew nuts

Afternoon tea
Avocado smoothie with almond milk


Dinner
Lettuce cups with sundried tomatoes, basil and chopped nuts
Cucumbers with Melitzonasolata and hummus dip
Tofu squares with asparagus in soy ginger sauce

Very healthy .. I am impressed! I am having a dinner party tonight ... there is a lovely smell of garlic bread wafting from the oven .. shame I won't be having any :(

How do you do your Gujerati chicken Ethyl?

I'm doing chicken tikka tomorrow evening (was sort of going to do it tonight, but want to do a decent 24 marinating), and I'm going to do some pakora, with gram flour. The gram flour will be a new food (well, newly tested since diagnosis) for me, so fingers crossed.
 
How do you do your Gujerati chicken Ethyl?

I'm doing chicken tikka tomorrow evening (was sort of going to do it tonight, but want to do a decent 24 marinating), and I'm going to do some pakora, with gram flour. The gram flour will be a new food (well, newly tested since diagnosis) for me, so fingers crossed.

it was gujerati cabbage and carrots- thought the curry was nice too. Heat some oil in pan that can stay on hob, when hot add two cloves, 3 cardamoms and a small piece of cinnamon stick( bigger if you like it) and heaped tsp cumin seeds - when aromatic add 2 small sliced onions and 4 cloves garlic and saute till golden brown, then add a squirt ginger paste ( or use fresh grated ginger but add earlier) then add 1tsp turmeric, 1tsp chilli powder and 1tablespoon ground coriander. Let release aroma then add two blitzed large fresh tomatoes - stir fry fpr a couple minutes then add diced chicken , stir to coat - add splash of water, handful fresh chppped coriander and cover. it's quite a dry curry so you can add more liquid if you like- when nearly done add 1tsp garam masala and a big squeeze of lemon juice.

the cabbage thing is even easier- shred white cabbage and 1 carrot grated per person. heat oil in wok or frying pan and add 1 tbsp mustard seeds and a couple of finely sliced green chillies. then add veg and stir fry till done.
