Thinking tomorrow's reading could be a bit high.....

Brekkie was berries n cream, so imagine my shock when an hour late my BG was 11.7!!!
But it turned out to be a rogue reading. 2nd attempt was a more reasonable 6.8.
Phew!

Equally odd was the 7.8 two hrs after fish n 1/2 portion chips at lunch. Yum

Evening meal was egg n bacon, so the veggie quota was sadly absent today. Bad B!

Fish and a few chips doesn't seem to spike me too badly either. And the chips in pub chains seem to have even less effect.

Brunch: feta and Quorn chorizo omelette with ketchup

Dinner: cucumber salad, spicy chickpea curry, asparagus with ginger, minty tofu dip.

I have been raiding Manjula's Kitchen site for Indian vegan side dish ideas. Tried two of them tonight and they were very tasty! Will make them again :D

Stage 1 of Diabetes Miracle eating: day 1

(Basic premise, spend 8 weeks eating very low carb. Then very slowly reintroduce small quantities of carbs, to allow your pancreas to first rest, then relearn how to release appropriate amounts of insulin - no dumping! During phase 1, no more than 5g of carby carbs per meal, eat every 5 hrs through the day to prevent liver dumping. Never eat carby carbs alone, instead bury them with a meal. Fill up on unlimited quantities of low carb salad, veg, meat, fish, dairy, healthy fats)

So, I ballsed up first thing by not having brekkie within an hour of waking up. Lol. I could blame mr B, but really, it was my fault...

10am 1 sausage, 2 egg, 3 bacon with succulent translucent crunchy fat. Yum. Guessing 5g carb in sausage.
2pm Brie and scratchings cos I've missed them
18.30 chicken tikka masala, homemade, with broccoli spears, runner beans and string beans, followed by a teeccino drink and cream (5g carbs)

Now I just have to remember to snack at bedtime. Oh the hardship...
