What have you eaten today?

Thank you Skal for reply, I guess I will just keep trying etc and find what suits me best, looking forward to Thursday nights dinner, large doner kebab minus the pitta bread, never thought in a million years a kebab would be good for me!!

Diagnosed prediabetic Easter 2014. Just left to get on with it, no guidance or help from GP. Every day I'm learning something new.
 
Today has been a bit of a muffin fest!
B - 1 homemade low carb lemon & ginger muffin, homemade latte
L - 2 more muffins
D - crispy tofu with 1/4 avocado, green salad and chilli sauce
S - 1 tsp sugar free peanut butter
2 cups of coffee at the hairdressers which spiked my sugars - god knows how much milk they put in
 
Someone kindly bought me a big cappuccino at Costa (I was going to order an Americano). Despite taking insulin for a guesstimated 4g of carbs my blood glucose rocketed up from 5 to over 9. And this was supposedly decaf. Bewildering.

Since then things have gone from bad to worse. I am two croissants in to what looks like a high carb day. The problem is I have not done my shopping and I don't have good low carb food to hand. I have to plan ahead to low carb well.

Breakfast: cheesy omelette

Lunch: Greek yogurt, veg raspberry jelly, raspberries, creamy decaf

Dinner: a bag of vegetable stir fry - beansprouts, cabbage, mushrooms etc (45p with a yellow sticker!) with a kind of satay sauce made from mixing peanut butter, Nando's peri-peri sauce and philadelphia.

Pudding: 2 squares of 85% chocolate and creamy decaf
 
I like the sound of your satay sauce! Have to put it in the memory banks for future reference!;)
 
On waking: 6 cashews
Breakfast: crust less quiche. I think our microwave is dying. Half my portion was cold, the other half molten. Unexpected. I hope the surface of my tongue will grow back. In time.
Lunch: veg soup and lemon blob
Dinner: roast chicken. 2 legs and all the skin. A lemon blob.
Last thing: 6 cashews

Are you having the cashews for DP? I see a lot of ppl use cheese last thing at night too and I haven't found my best option yet. I'm sticking with cheese at the moment.
 
@Brunneria have you tried subbing some of the butter in your lemon blobs for a bit of coconut oil? It goes quite hard and lardy when refrigerated. Might make them more robust?

What an excellent idea!
I seem to be a terminal recipe tweaker. So this will allow me to continue the exploration.

Of course, now I have to make 3 more batches; one with gluten, one with coconut oil, one with both.
The sacrifices I make to further my knowledge. :happy:

Green papaya, long beans, tomatoes, chillies, garlic, fish sauce, lime juice, peanuts, think that's it, should have dried shrimps but I'm not keen on em still, it is quite nice with pork scratchings as a side funnily enough, but not sure I should have them aswell.

Breakfast: 150 g Lidl Greek Yoghurt, 75 g rhubarb and 10 g Linseeds.
Lunch: 60 g Rye Bread, 50 g chicken, 100g cauliflower and 50 g cucumber peeled. 50 g nectarine.
Dinner: 200g thin H bone, onions and 125 g coleslaw,
Water through out the day....
Breakfast and lunch are nearly standard, Dinner does vary but mainly meat, two veg and salad.
Losing weight and still not feeling a hunger.
Question: I go for a good stiff walk at lunchtime, 40 mins... is it best to eat before or after?

Thanks for that! I ordered separate pork crackling from farmers choice this month, going to be delivered on Monday. I am steadily reducing carb intake as I'm feeling less and less hungry so feel quite satisfied with a bit of protein, sauce (eg butter or cream) and veg.
 
breakfast turkey rashers, tomato, mushrooms, poached egg
lunch- chicken and feta salad
dinner- back late so mushroom and bacon omelette
 
Breakfast, Greek fullfat yoghurt with flaxseed, blueberries, cinnamon, nuts. Lunch: cauliflower cheese soup (yum), coffee, water, dinner another bowl of cc soup with flaxseed sprinkled on top. Coffee, tonight, a cuppa of tea with nuts and a couple squares of 90% dark choc. :-)

Another hypo day and another mountain of carbs (80g) to (over) treat it. I had a great evening meal though of Black Farmer sausages and some 85% chocolate at bed time.

Tomorrow is another day. :-)
