What have you eaten today?

B... butter, 4 mushrooms, more butter, 2 eggs, 2 dozen spinach leaves, crumbled feta cheese, with side of 2 strips bacon and a coffee.
L... 7 ounce can tuna, 3 T mayonnaise, 6 bread and butter pickles - (half for today, half for tomorrow) - with two slices extra sharp cheddar melted on top; 0.35 ounce 70% cocoa chocolate; water
S... 1 red bell pepper sliced with Ranch dressing on the side; water
D... butter, saffola oil, 1 boneless pork chop, added red wine and mustard for sauce; 8 asparagus topped with sliced extra sharp cheddar; 0.35 ounce 70% cocoa chocolate; water
S... butter, egg; 2 link sausage; chamomile tea

I know this seems like a lot of food but this is Day 5 for me on the LCHF diet, and I'm trying to eat enough to not feel hungry, also to eat at least one vegetable at or between meals.

Tonight I bought 2% plain greek yogurt with active cultures. I need ideas on what to eat with it.

Hi @Susikav it is butternut squash mashed and then fried. Sorry should check grammar etc after I've written it and before I've posted it! Cant eat mashed potato as it spikes! x
What a relief! If I'd taken more time id have known.. :) But butternut squash spikes me a bit too.. It's very sweet.. Couldn't you just cry sometimes? :arghh: :p

B: Green tea with lemon. Coffee with butter whisked in. Poached egg, baby avocado and a toast soldier with butter.
L: Baby avocado, gherkin, olives and shredded chicken topped with melted cheese and chopped coriander, drizzle olive oil and vinegar. Square of dark choc.
T: Low carb cottage pie with broccoli, cauli, carrot, green beans.
S: 0
D: 2 teas with semi skim milk

Will probably have the one remaining bar of dark choc before bed. It needs eating to make space for big shop tomorrow - needs must I suppose.:hilarious:

Happy with diet today, started with a reaidng of 4.9 and so far have tested after each meal and not had a reading above 5.3 :).
Brilliant!! :singing: I am home in the UK for a few weeks so I will try to establish a proper routine, which I find difficult when I travel so much.. You are an inspiration:cool: I will follow your good lead... And add green smoothies... :)

Wow! You're good :) you could have a small handful of blueberries, a couple of sliced strawberries and a couple of raspberries with your your yoghurt – I sprinkle the fruit with a little Stevia too... lush.. Make a smoothie? Brazil nut, raw spinach, blueberries, small piece of banana or half an avocado and a little milled flax or Chia seed for fibre? Pour it on some roasted rhubarb that has been sprinkled with Stevia and a little ground ginger, sprinkled with a few nibbed almonds? Right, I'm hungry now! Off to make a smoothie :-)
 
My absolute favourite fruit/vegetable.

Chargrilled then piled on a plate with mozzarella, avocado, red onion, tomato, drizzled with olive oil and scattered with sea salt.

Made a big bowl of ratatouille last week and ate it hot and cold with everything - cod, scrambled eggs, smoked salmon, bacon, chicken etc.
My goodness chaps, loads of inspiration and variety there... Thanks for posting your lovely ideas :)

This was an exceptionally good day though, wish every day was this good. Went to bed at 6.1 last night, so fasting was 5.3, is there a yawn smilie I wonder? **** Hotel Chocolat! Actually, I think it was the veg curry I did last night, it was very tomatoey and quite sweet in the end. I guess it's all about finding what works and then sticking to it. In theory I should stick to only the things that keep me low, but in reality that's just no fun at all!

Lovely berries - raspberries and blackberries are my fav. You could also add some finely chopped nuts in to give a bit of texture

...then Somerfields became the CoOp and is a resounding failure from what I can gather...
Co-op have been around since Adam was a lad but their stores always stayed small, local shops, unlike the big 4....equivalent to the Morrison's Local and Tesco Express stores...
 
LOL my first job, aged 17, was with Gateway. Butchers assistant - Friday evening and all day Saturday. Decent pay, got myself a stereo system.
