what is your best coconut-recipe ?

in what ways do you use coconut oil and flour?

it would be wonderful if you would write your favourite recipes hereunder

I find it difficult to make food with coconut flour and coconut oil, but I know it is terribly healthy and want to mix it much more into my foods..

no I have found that coconut oil tastes great as a substitute for butter on bread ... bu my imagination and good ideas are too few when it comes to both coconut oil and coconut flour ... please share if you have some fabulous recipes :):):):):) ?

How about macaroons?

Take egg whites, add sweetener of choice (I use xylitol), beat until stiff, add coconut flakes, coconut flour and some coconut oil (not too much), mix lightly (but make sure you are not losing too much of the volume of the beaten egg whites), bake at low to medium heat (somewhere between 150 and 180 degrees). If you want, you can cover the bottom of the macaroons with high cocoa content chocolate. Melt chocolate at low heat on the stove (preferably less than 100 degrees centigrade) and dunk the bottom of the macaroons in the melted chocolate, put them in the fridge on baking paper until the chocolate is solid again.

Sorry, I can't provide exact measurements, as when I make macaroons I just do this by guessing the quantity of ingredients. I am sure when you google it, you will find a more detailed recipe.

Hope others will be posting many more great recipes.

@Freema I've not used coconut flour yet,but I use the coconut oil for the seed crackers on the Diet Doctor web site. Ive adapted the recipe and make a tray of crackers with the salt added to be eaten with cheese.To the mix for the second tray I add chopped nuts (ready chopped from Tesco if I'm in a hurry) After the second batch have cooled I drizzle them with 80% dark chocolate melted.These are the nearest thing to a chocolate digestive biscuit but much nicer.Because there's quite a few ingredients to measure out in tablespoons,I measure out two or three sets at a time and bag each mix in a sealed plastic bag.To make up the mix I just add the boiling water and melted coconut oil and it saves a lot of time.

I've just made my first experiment with coconut flour today, it was a mug cake/pudding and it turned out pretty well :)

measure out 1 tbsp of coconut flour, 0.5 tbsp of unsweetened cocoa powder, 2 tsp of sweetener and 0.25 tsp of baking powder into a bowl and stir together. In the mug you're going to bake it in put a small knob of butter (I used half of one of those little individual foil wrapped portions you get in cafe's because I was at my MIL's house) and 0.5 tbsp of smooth peanut butter, microwave for 10 -15 secs to soften then stir together and add 1 medium egg, 1 tbsp of milk (I used almond milk) and a drop of vanilla extract, beat together then beat in the dry ingredients until completely mixed. (It looks like a pretty wet mixture and I thought perhaps I'd put too much liquid in but it was fine when it was cooked), microwave on full power for 1 min 20 secs or so. It's done when the middle still looks slightly damp. I ate it with some full fat greek yoghurt and it was nice, moist and chocolatey and quite a decent size :)

My food app says approx 180 calories for the chocolate pud, 6.7g of carbs, 10.8g of protein and 12.4g of fat.
It didn't taste of peanut butter but next time I might try it out with double the amount of butter and no peanut butter (or coconut oil instead) which would bring the carbs down further.

I´ll try making that cupcake/mugcake it sound like something I would really like
