What new food have you started eating since diagnosis?

I am buying many foods now that I didn't buy before diagnosis to expand my menu. So far so good.

85% chocolate
Aubergines
Capers
Tinned artichoke hearts
Flax seeds
Psyllium husk powder
Coconut oil
Coconut milk powder
Jelly!

My goodness, I hope I can get to the stage where 85% of my intake is chocolate!!

Ah well, I suppose we call live in hope..!
 
Dark chocolate! Chicken! Cheese! Liver! Some fava beans! and a nice Chianti ;-)

Never tried celeriac.. Would have to look on line how to prepare it.. Is it peeled?

To me celeriac looks a bit like a bumpy turnip, and yes it needs peeling, and chopping. It needs a bit of effort as it's quite solid! I cut a slice off , peel edges, and cut into about 1.5 inch rectangles or cubes, then coat it in melted coconut oil and cook it in my Remoska. It goes slightly soft and a nice goldy brown on the outside, and tastes rather like parsnips.

Thank you so much..ps I had to phone my mum yesterday and ask whether I had to peel chorizo!! All these new foods and I haven't got a clue!!

Double cream

I think I am supporting an entire dairy herd.

And cream cheese.

For years I avoided dairy because it made me feel bleugh.

Turns out that's only if I eat it with carbs. So now I glut on cream, cheese and cream cheese. Astonishing, really.

I forgot to include golden flaxseed (both whole and miled), and almond and hazelnut milk in my previous post, but the milks and milled flaxseed have become such an integral part of my diet now that I never thought to mention them! I like the milled flaxseed, but the whole seeds look so much like what I feed my canary that I'm not over fond of it, and it does tend to stick in my teeth...

I've got a new type of cheese, Halloumi, to try this week, as I've seen some recipes for frying it which have made my mouth water.

Blueberries and cream and .... jelly.

btw I bought 3 100g bars of 90% chocolate - it's vile!!! . What can I do with it,
 
Add it melted to whipped cream

Make choc desserts and and sweetner.

Give yourself a chance to adjust to it.

Melt it and mix with cream cheese.

Choc cheesecake

Diagnosed prediabetic Easter 2014. Just left to get on with it, no guidance or help from GP. Every day I'm learning something new.
