The missing information is how they achieve that and, often, their size. Colour me odd but rollitos and pork scratchings are not a lunch but YMMV/chacun a son gout. I will spoil all that slightly by saying great numbers @DJC3 @geefull and @OrsonKartt

Sounds as though you have started exactly the right way well done youI was diagnosed type 2 on Monday based on blood works and my GP calling me in for a confirmation finger prick test, I have an appointment in two weeks to go over everything with her properly as she was running late and didn’t want to rush. She said in the meantime to cut out sugar and carbs (including fruit which will be a struggle!) and do at least 30 minutes of exercise at least four days a week.
I bought a monitor today and did my first finger prick test in my car after work, based on having fasted since going to bed the night before. 6.8 mmol/L. It had gone up to 7.4 an hour later, and I’ve since had a small dinner and done the stationary bike for an hour (I don’t go crazy on it, not a stupid high resistance or speed), and now waiting for the two hours to be up and I’ll check it again.
I’m going to try not to compulsively check multiple times a day, and just wait to see what my GP says.

Well it’s only half after six here in Texas so it’s still a good morning folks. The good old boy’s gave the wheel of tom foolery a spin and it kindly spat out an unusual 4.9. I did a yip and a sip, and a holler and a swaller with my morning tea.
Yesterday it was 35 degrees here. Went over to Fredericksburg, an old German settlement that also houses the National Museum of the Pacific War and the Nimitz museum. Contrast to the next stop, Luchenbach, another old German settlement with a Post Office, dance hall, bar and BBQ pit .

My HbA1c is 42 - so I can only dream of 37/38. When I get downhearted about this I do keep reminding myself that it was 125 on diagnosis and when injecting insulin it was in the 50s. So 42 on keto and no insulin is not too bad. I am hoping for a 39 next time as all my BS readings have been a lot lower over these last few weeks.
I think you are right and of course it is perfectly possible that I will get the lower numbers eventually but that it will just take me a lot longer. By the way - you have brilliant Hb1Ac numbers.I suspect that how long you've been diabetic and where your numbers were when you were diagnosed has a big effect on numbers.

...now I feel old. Going back to Texas in a month (lived in Austin/Dallas for a very long time) and can't wait. (And...ahem, nachos, quesadillas, queso... all the things I can't eat anymore.)
