Now that i have been reading this forum, i am developing a conconcious, what can i eat as snacks? 3.30 sunday afternoon, to long until tea time. what do you guzzle ?

Naughty! :lol: Don't know if you want the opinion of a mere T2 :D but I've just had a really big mug of home made chai tea, pretty filling in itself and a crumpet with lashings of butter! - but that is a Sunday afternoon only type of treat and I only had a small bowl of courgette curry for lunch!

you can have a blue badge as it has no carbs but i would only eat half :lol:
as for snacks i eat a little apple or some olives.

you just beat me to it suggesting the cheese its my favourite snack never thought to have it with an apple ill try that tommorrow :D
 
If you have an Apple try a Pink Lady........mmmmh !! :wink: That and the strongest Cheddar going has been one of my favorites for a year or two. I also just have a slice or two of cold ham and a few Garner's pickles, again delicious and doesn't affect Bg levels
 
Oohhhhhhh. Love the idea of those muffins! Have printed off the recipe and shall try those tomorrow! Mmmmmmmmm. :D
I also have : chilli flavoured seeds called Munchy Seeds. I have a small handful of those with cheese for a quick snack.
Celery with peanut butter or dairylea cheese.
The ubiquitous low sugar jelly(doesn't every diabetic in the whole world!! )

Low Carb Blueberry Muffins
Blueberry Muffins Recipe

Ingredients

* 3 cups (230 g) ground almonds 16 carbs
* 1 Tbsp baking powder
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* 10 Tbsp (140 g) unsalted butter (1 1/4 stick), softened
* 12 g splenda 12 carbs (or the equivalent of 1 cup sugar)
* 2 large eggs
* 1 ½ cup (200 ml) plain yogurt / soured cream 8 carbs
* 1 teaspoon grated lemon peel
* 1 1/2 cups (140 g) blueberries 14 carbs
* 1 Tbsp ground almonds (if using defrosted frozen berries)


Method

1 - Adjust the oven rack to the middle-lower part of the oven. Preheat oven to 375°F/ 190°C.
2 - Whisk together the ground almonds, baking powder, baking soda, and salt and set aside.
3 - In a large mixing bowl, cream butter and sugar together, beating until fluffy. Add eggs one at a time, beating until incorporated after each one. Beat in the grated lemon peel.
4 - Beat in one half of the dry ingredients until just incorporated. Beat in one third of the yogurt. Beat in half of the remaining dry ingredients. Beat in a second third of the yogurt. Beat in the remaining dry ingredients and then the remaining yogurt. Again be careful to beat until just incorporated. Do not over beat. Fold in the berries. If you are using frozen berries, defrost them first, drain the excess liquid, and then coat them in a light dusting of ground almonds.
5 - Use a standard 12-muffin muffin pan. Coat each muffin cup lightly with olive oil or grapeseed oil using a pastry brush, or with a little butter. Or use one of those convenient vegetable oil sprays. Distribute the muffin dough equally among the cups. Bake until muffins are golden brown, about 25 to 30 minutes. Test with a long toothpick to make sure the center of the muffins are done. Set on wire rack to cool for 5 minutes. Remove muffins from the tin and serve slightly warm.

Each muffin has 4.1 carbs

These sound fab - I'm a sucker for a blueberry muffin :oops:
Can you taste the almonds? Am not a big fan, but they look too important to leave out the mix! x
 
the almonds are not overpowering these muffins are very nice, but the ground almonds are necessarry you could not leave them out of the mix
 
Low-carb ham and cheese muffins (adapted from high carb recipe):

280g ground almonds (about 18g carb)
2 tsp baking powder
Pinch of salt
100g finely diced ham
140g grated mature cheddar
2 eggs
250ml milk (about 14g carb) (you could use half water to lower carb further)
4 tbs oil or melted, cooled butter (I usually use ground nut oil as it's quite bland)
Fresh ground pepper to taste

Preheat oven to 200. Line 12-hole muffin tin with paper cases. In large bowl, mix ground almonds, baking powder, salt and pepper to combine. Add the ham and 100g of the cheese and mix them in. In another bowl, beat the eggs then beat in the milk followed by the oil/butter. Pour the wet ingredients into the dry and mix to combine. Use a teaspoon to put the mixture into the muffin cases. Sprinkle the reserved grated cheese over the top of each muffin. Bake for about 25 minutes. I think these have about 3.5g carb each although I wouldn't swear to it! (But they don't affect my BG much). They freeze well but they don't keep well unfrozen, so freeze as soon as they have cooled.

i too love a pink lady but they scream when i bite into them :lol:
but yes i normally have a little for my tea :)
 
These ideas for snacks sound great! Off to the shops now to get some apples to have with my cheese! And the muffins sound loverleeeee!
 
thanks all, great ideas! do ryvitas have carbs, what can i stuff my face with? without being punished?
