If you are craving pancakes, have you tried this recipe from dietdoctor.com? It's not a keto low carb recipe, though at 10g carb/serving!
Serves 4
4 eggs
1/2 lb (250g) cottage cheese
2 tbsp ground psyllium husk
2 tbsp butter or coconut oil
Blend all ingredients for the batter and let it swell for 5 mins or more.
Heat the butter/coconut oil in a frying pan and spoon 1/4 of mixture into pan. Cook until browned on bottom then flip and cook on the other side. Repeat with the rest of the mixture. These pancakes really stick as the cheese melts but a ceramic pan is great or a really good teflon pan.
Serve with a dollop of heavy whipping cream and a few berries or nuts.
Really delicious.
Alternative: 4g carbs/serving

Ingredients
6 eggs
1/2 cup (120g) coconut flour
3/4 cup (180 ml) coconut milk
2 tablespoons melted coconut oil
1 pinch salt
1 teaspoon baking powder
butter or coconut oil for frying
Instructions
1.Separate the yolk from the egg whites and whisk the egg whites vigorously with salt, preferably use a hand mixer. Continue whisking until stiff peaks form and then set aside.
2.Whisk together yolks, oil and coconut milk in a different bowl.
3.Add coconut flour and baking powder and mix into a smooth batter.
4.Carefully fold the egg whites into the batter. Let sit for 5 minutes.
5.Fry in butter or coconut oil for a couple of minutes or so on each side on low to medium heat.
6.Serve with melted butter or fresh berries.
