I do that with Spudlite lower carb potatoes.Has anyone tried using boiled potatoes in a potato salad and tested blood sugar? Cooking them then cooling makes them high resistive starch,
I use cauliflower instead of potatoes for potatoes salad and it is pretty good.No potatoes and more eggs.
Generally No spuds for me except 3 times a year on a roast.If you live in Australia (no place listed in your profile) you can get Spudlites which are a lower carb potato, I eat these but I cook them first and then reheat them the next day.
I believe a similar potato is available in Holland, @Antje77 might have a link for that.

Use an air fryer , they turn out great!Sweet potato not as bad as spuds. Yet to find a way to make them into crispy chips.
