Once your body has processed the stuff that created it and came back down to normal levels, its not likely that you will suddenly start going in the opposite direction again ( at least I never have during my numerous mistakes. ) You may find you run a bit higher on average for a little bit until its worked through completely, and your blood glucose numbers might be a it more volatile for a little while - that is probably because when you ate the food , you also increased the levels of insulin in your body and it takes longer for that to work through than the glucose.
