I am surprised that you need more protein than you could get from normal foods - I suspect that you are not eating well - not in general, and for your diabetes in particular.
I do eat livelife bread once in a while, and I make cheese waffles - to wrap around sausages.
My daily intake of carbs is under 40 gm, I eat twice a day, usually, and have proper meals, meat with the fat that comes with it - I do cut off the fat if I find I don't want it - I do go with how I feel quite a lot.
Chicken with the skin and bone left in so I can use an air fryer which stirs the food around - I make stir frys from low carb veges, eat salads with oil and vinegar dressings.
When I eat steak, pork chops, I always eat the fat, best bit and only reason I eat themSeed oils can be a problem for some people, even those labelled as 'healthy' as the concept of saturated fats being deadly is proving to be problematic - we need saturated fats to survive, and whilst processed foods are being produced to the accepted ideas, there can be problems if you are heavily dependant on them.
Weight training is great. I think I know what you are trying to achieve as I am on high protein. Your diet seems to be close to Stan Efferding's Vertical Diet. Your body may not be ready for the carb choices. I would replace the high gi carbs with asparagus, brussels, leeks, green beans, bell peppers, bean sprouts, cucumber, courgettes, couple of cherry tomatoes, raspberries, strawberriesI understand what you are saying but I cannever seem to diet, stop drinking unless I have something to replace it with and that is always weight training. This was my best meal day ever, as I did not have any side plates of nuts or berries. My lean muscle mass is 72 kg, never taken a shake or PED's, pre or post workouts. I believe liquid protein is marginal at the top end. Leucine just needs to be present in a wider window than what bro science states and a progressive stimulus to muscle failure. I am considering signing up to the Ketogains protocol, as they are the real experts,
This video shows a real world example of a person taking shakes compared to whole food:
