Vegetarians: What have you eaten today?

Well I just had the same menu as yesterday .. it was very nice x

I will be cooking cauliflower cheese tomorrow though , the almond milk makes a nice sauce I find :)
I will add more tomorrow
 
I ate well today for a change, and my BG readings have remained in range, so...

B: Porridge

L: M&S Egg & avocado sandwich (had to play hunt the avocado). For my "meal deal", I selected apple & peanut butter - I should have chosen crisps because it was a very weird combination.

Snack: Chocolate cheesecake & a latte (hence I know I'm feeling better!)

D: Pasta with beans/veg in tomato sauce.

Going to have golden milk before bedtime - maybe that's helping?

Off topic: I've been told my "urgent" CT scan is still another 6 weeks' away.

If I show you my results from last year, it may help you to understand which figures relate to your own. I'm guessing you will have been given the LDL and HDL figures, or possibly the total divided by the HDL. According to the NHS, LDL is the bad one that clogs arteries (but some dispute that).

Serum cholesterol 5.0mol
HDL the good cells .. 1.65
LDL the bad ones .. 2.8

Part of my menu is statins ..:)

Serum non high density 3.4 I like that number for some reasons ..
I wonder Now about the fats I was a 3 last year .. rather than a 5 coconut oil and peanut butter are my fats ..

Menu ..
Today I made cauliflower cheese .. two, one we have just eaten :)
Tomorrow I will roast with butternut squash and sweet potatoes to go with part two
Or just have courgettes

I have made an aubergine curry for the fridge that will be for Thursday ...
And a pot of tomato and roasted pepper soup .. for the week ..
 
@Kat100 Oii! Where did you get that aubergine?! o_O My local Tesco has not had aubergines or courgettes for weeks now. Only spiralised courgettes. I will look further afield as I really fancy a big roasted traybake for the weekend. "Jamie at Home" is on the Food Network just now - it's the courgette episode. Not watching it. Torture.

menu sounds lovely , I love a M & S sandwich, how nice , and you did eat well
So sorry your scan is such a wait .. that's not quick at all ... what a nightmare all this waiting for a much needed appointment

No aubergine , I went to the market , I call them little or baby aubergines .. they were from a Asian stall there , twice a week you can get all the veg from world wide x

Ps both veggies were in Tesco last week , I will have a look on Friday when I do the main shop x

@Avocado Sevenfold I've tried the 99% Lindt, but it's too much for me, so I'll stick with 85%

I saw some aubergines in the grocers and I ignored them: £5 a kilo. No courgettes, at any price.

Yesterday:

B: porridge with blueberries

L: Leek & potato soup, bread roll

D: Haggis, tatties & neeps (a week late, but Waitrose were selling off MacSweens veg haggis)!

I didn't attempt the address :-)
 
@Avocado Sevenfold I bought some nooch, but haven't tried it yet. It looks suspiciously like goldfish food!
 
I've received my blood test results:

Cholesterol slightly worse than last year (not a surprise based on my high calorie diet and lack of exercise due to illness):

HDL 1.0
LDL 3.8
Total/HDL 5.3

Hba1c 41 - this is down by 1 (which is a surprise given how ill/inflamed I've been over the past 3 months), so happy with that.
