Well seems I can't tolerate the 1 slice with top crust cut off in the morning so it's a timing issue I think as my fasting glucose is 7.6 or 7.8
I was 7.6 fasting then had breakfast and 2 hours later was 9.2 or somethingThis does not make sense. What were you fasting, what were you pre food and what were you two hours after? That is how you test if certain foods cause problems.

Burgen bread will raise blood glucose quicker than Lidl rolls, due to using whiteflour not wholemeal.
If you are able, you can really help your insulin work better and burn off the excess glucose via exercise like a quick walk for 15-20 minutes 1 hour after eating. If fasting is already high, why not try before breakfast exercise?
