My curry is like this one, except I substitute butternut squash for the potatoView attachment 25775 Well the results are in. Cooked with chicken, and butternut squash in place of potatoes. Both my hubby and I really enjoyed it, yet to see what my two hours after blood sugar is but the curry and ‘rice’ totalled just under 15g of carbs so I think I should be ok.
