Hello everyone, Josh here:
It's been very difficult for me to find a good recipe. Don't like mushrooms or peppers of any colour
Do you have any favourite vegetables to keep energy up?

https://www.dietdoctor.com/low-carb/vegetables might help. For me, I have a lot of lettuce, cauliflower, broccoli, olives, avocado, asparagus and spinach. Spinach goes in just about anything, from proper dinner with bacon and cheese to lunch with some eggs and whatever I have laying around. Cauliflower's nice and versatile, goes with whatever herbs and meats I feel like using... Olives go into salads or function as snacks, or if I'm making an egg-based pizza-ish lunch, it could go on my omelet with some pepperoni and tomatoes... You get the idea. :)

lettuce wraps, stuffed cabbage

Roasted cauliflower, parsnips, egg plants, spouts, asparagus in oil, seasoning, delicious.
Zucchini raw or cooked in stir fry
Spinach raw, or stir fry with garlic.
White cabbage or red cabbage - homemade brine or pickled at home - shop bought has a bit of sugar in it.
Ice berg lettuce as wraps, in salads (it's so good in vietnamese dishes).
Cucumber - however you like it, it goes with most salads.

Stir fries, curry and casseroles, also raw veg with dip :)

but not necessarily in that order :)

And I also eat tomatoes, a few strawberries and a few raspberries - but I mainly eat bacon, eggs, meat, fish and poultry.

Broccoli, cauliflower, pumpkin, low carb spuds, beans, lettuce, capsicum, eggplant, mushrooms just to name a few...
what are low carb spuds?

They all sound excellent suggestions except parsnips, surely they are high carb, they even taste sweet.

To keep energy up? I eat meat and fish eggs and cheese as fuel.
For tasty crunchy meals I have salads and stir fries - but I don't run on carbs any more.
