Looking for ideas for low carb 2nd course- ''sweet'' or savoury

With the help of a GP my average fingerprick readings have fallen from 10.1 to 8.2 in a few months. Im looking to drop them a bit further.

With main meals I often have a 2nd course, yoghurt, frozen berries , no sugar jelly, no sugar yoghurt.
Im looking for tasty ish low carb 2nd courses ''sweet' or savoury. Or something to bulk up the 1st course
Not white flour
Can involve fat (I weigh 8 st)
limited bread

Couple of square of 90% chocolate, cheese & low carb crackers, if you like cooking make a sugar free lemon curd, very easy & delicious stirred into whipped cream or yogourt

When eating out, my choice of dessert is always a selection of cheeses, and I wouldn't mind doing the same at home, except I'm not used to eating dessert.

I bulk out my main courses by substituting the carby component of the meal for extra veggies - onion, cabbage, cauliflower, and adding some more fats like butter, cream or cheese if a meal seems to be low calorie.

I also make a bread and butter pudding made with a mini panettone, and half the custard from delias recipe, again with sweetener not sugar. https://www.deliaonline.com/recipes/collections/hot-puddings/bread-and-butter-pudding I’m not sure why but it doesn’t spike my blood sugar. One mini panettone makes enough for two people.

In summer I make my own ice cream with cream, low carb fruits, sweetener, using a basic ice cream maker from Lakeland,
 
@Lakeslover mention of ice cream reminded me of an “instant” ice cream I make in summer. You have to eat it right away and you can’t put it in the freezer but it’s a great very quick pud.

A few frozen berries, a glug of double cream & sweetener of your choice to taste, a quick wiz up with a hand blender, = instant ice cream :)

Cheese sounds a good idea , if i stick to low cholestral ones , some ot the time. The recipes look good.

I will try the recipes and sometimes bulking with peashoots and greenleaf salads , plus a sprinkling of chia seeds seems to work. The 2 courses has always been a habit but worse when married to a 2 course eating hubby :cool: Both came from parental generation of war time cooks who lapped up sugar when it was no longer rationed and cheap
 
A useful basis for many second courses is a sponge type pudding.
An egg, two Tbsp of almond flour 1Tbsp of coconut flour 1Tbsp of butter, coconut oil or suet, a scant 1/2tsp baking powder.

You can then add various options;
a splish of vanilla or lemon essence,
the zest and juice of a lemon or tangerine
cocoa powder
A Christmas option is a Tbsp mincemeat, a Tbsp mixed peel, a few sultanas seethed in warm milk, cinnamon ginger nutmeg cloves and mixed spice, 1/2 tsp baking powder and the same of vanilla.

Mix everything together. I usually add a little milk to make it easier to beat, then a little more coconut flour as that absorbs moisture and firms it up.
Microwave for 1 minute, then in short bursts of 10 seconds until firm in the middle - it often shrinks away from the sides just a little to show it doesn't need another burst of energy.
I did try it with cheese and onion, grated red leicester and a diced onion - it was a small onion and I think it needed more. I put the diced onion in the microwave to warm it up before mixing it in, as it was cold from the fridge. I have not tried it again simply because I have not needed to.
 
I make a couple of desserts
I make my own ice cream.
I separate 3 eggs. Mix the yolks with 2 tablespoons of brandy and frozen berries. I then whip up 300 mls of full fat cream then beat in 150 mls of crème fraiche. Beat the egg whites until stiff and fold them into the whipped cream. Then I stir in 100 gm of mixed chopped nuts, and the berry, yolk mix. Then freeze it .

I also make Brigadeiros. A Brazilian desert - Rolled chocolate balls with chopped nut coating.

30g butter
4 tbsp cocoa powder, plus extra to coat
1 tbsp double cream (optional)
1 x 397g tin evaporated milk
Stevia sugar to taste
Hundreds and thousands, coarsely ground nuts or desiccated coconut, to coat

Put a small heatproof tray or plate near the hob.

Melt the butter in a small saucepan on a low heat and sift in the cocoa powder. Stir into a smooth paste, then beat in the cream, if using, and the condensed milk, plus the salt. Whisk or stir until well combined. Add stevia sugar to taste.

Pour on to the tray, leaving behind any stuck to the base of the pan, then set aside to cool until fairly firm.

Scoop out teaspoons of the cooled mixture and roll them into balls. Tip your coating of choice into a small bowl and roll the balls in it to coat. Put in the fridge to firm up a little if necessary before serving.
