Hi,Within a reasonable limit then. I have been scared to eat potatoes mostly, but last night I had a roast chicken leg (didn't eat skin), one medium sized roast potato, cauliflower, broccoli and gravy. After two hours my BG went down by 0.3. I will try that again and if it's the case again I can afford to have a roast spud now and again..yummy.
Apologies to interject here - and by all means tell me to butt out if you already know this, or it's inappropriate.
I noticed you were saying that you were unsure how many roast spuds to eat - did you realise that if you've been exercising prior to eating (really needs to be over 30mins of exercise) you should be able to eat your spuds (or basically any carb) and not get a blood glucose rise?
When you exercise, your major muscle groups and liver use up some of their glycogen stores (that's how they store glucose). After you finish your exercise, you will find that when you eat carbs, you don't get the same rise - simply because your body wants to replenish these stocks and will use the easiest source of fuel to do this (so any carbohydrate that you consume).
Roast spuds sound like a pretty great excuse to exercise! Mmmmm!
