What have you eaten today?

They make a good bun substitute and are meaty enough to replace a second burger or bigger bit of steak. I like mine baked in oven with garlic and then topped with griddled halloumi as well. As I appear to have bulk bought mushrooms at Asda yesterday they'll be featuring heavily in mein this week.

I will look like a mushroom before long I eat so many of them.

I had an experiment tonight. Fish, chips and mushy peas from the chippy. I scraped half the batter of the fish and had only a few chips, but also had a slice of bread. Readings 6.0 at 1hr and 6.8 at 2 hours, on its way down at 2.5hrs. I am jumping for joy!!!!!

Have you tried cauliflower rice? It's obviously not rice, but it gives texture and is a decent "carrier" for sauces. Alternatively, when I wasn't eating rice (since getting skinny, I can eat it again :D), I used to have my curry on a pasta plate, so that it didn't just look like a runny dollop.

How many calories was that today? It doesn't look like many?
I haven't tried the cauliflower rice yet, but I have just received a cauliflower on this week's shopping and plan to make rice or a potato topping (well, a fake one LOL). Actually, my thinned out sauce was nice with it being more like a soup (I do like soup) so I reckon that might be a way to go. I had it in a pasta dish so it looked like a regular meal. I will try rice again at some point, but probab;y not till I've lost about 10% of my body weight (currently about 6% gone).

Calories, it was about 1100 according to MFP, but that's not a typical day. I'm usually about 1600 or so, but because I went for a swim and lunch time, I got home 3.30pm and it was too late to eat a full meal, hence the Babybel.

All the cheddar and jalapeño muffin recipes I found online contained flax seeds. I am unlucky when it comes to baking with flax seeds :***: So I just took this basic muffin recipe, omitted the fake sugar and vanilla and added half a cup of finely grated cheddar and a heaped tablespoon of chopped pickled jalapeños. Topped with more cheese for luck. Served cold. You can still taste the almonds, but it is not unpleasant and is very filling. About 3g carbs per muffin. Might add sun dried tomatoes and/or fake bacon too next time. A low carb pizza muffin is the dream lol

I took one out of the freezer to work this morning and it was defrosted by lunchtime. Handy.

I would have guessed less than 1100, so that's not too bad. You seem to be doing really well.

Being the idiosyncratic person I am, I have always been able to eat rice, just in the early days, I couldn't eat enough to feel it was worth eating, so gave it up altogether for a while. But, now paella is back on the agenda, amongst other rice delights. Hopefully, you'll get there.
 
B- greek yoghurt , berries sprinkle of nutty muesli and splenda
Lunch-skips celery phili cheese tomatoes and cherries
Snack -fredo 1 shortcake biscuit.
Tea-shepherds pie (not much potato , carrots and cabbage.
Supper 3 squares of high cocoa chocolate.
Not perfect but going the right way.

Incredibly weird day today, for many stressful reasons, but the food was ok.

Brekkie: eggnbacon

Snack: Morrisons 70% cocoa choc (which was delicious)

Lunch: pork scratchings and a peanut9bar

Dinner: lovely curried mince with toms, onions and greenery, puy lentils and about a tablsp of rice mixed in. Which I then dog walked off.

Snack: strawbsncream
 
Bf 2 egg omellette
Lunch bacon cheeseburger in lettuce, and shed load of mixed salad
A very small jelly

Dinner Chicken coconut soup
2 sq choc 99%
 
I tried another experiment at lunch time.

Heinz Low Sugar baked beans, 100g with a poached egg on 1 slice of toast and butter. Nothing else. I frequently have 2 poached eggs on this same toast without any significant rise, so can discount the bread. I was 5.8 before eating, 8.5 at 1 hour, 8.6 at 2 hours and 6.9 at 3 hours. I haven't had such a high lunch spike in a long time, in fact since I last had these beans back in May. I shall not be trying that again.

You could be eating a lot more filling things that are less calories and sugar.

My Diabetic Nurse said to get the cheap beans not Heinz. Dunno if the cheaper own label ones are any better but that what she said. I used to love my heinz beans cooked for ages with butter and garlic granuels.

Phew! School holidays = lots of eating out. Im like Carol Voorderman doing the maths at the table. "No chips please" is my new catchphrase. Theres still 3 weeks left and weve got an 8th birthday tomorrow.......cake n everything. Eek! Weigh day in the morning I will be so chuffed if I still manage to lose amidst this calorie chaos!!!!
 
Well my eating plan has given me normal BG and I've been losing weight so I'm very happy. I feel a lot healthier now. I've lost another 6lbs now down to 12 stone 9. Got a way to go to reach my goal of 9 stone but considering at my heaviest I was 15 stone 6lbs I'm quite happy. I'm doing it slow and steady losing 2lbs a week.
 
Brekkie; bullet coffee/fat coffee (300 ml coffee with 40 g coconut oil and 45 g Kerrygold)
Afternoon coffee with 1 tbsp coconut oil and 1 tbsp Jersey cream
Dinner; planning to have app 300 g filet steak (actually tail end) a lot of butter and salad or kimchi
This very low carb version really works, weight coming off and feeling fine, great to discover I can get to some nice old clothes.
 
Well my eating plan has given me normal BG and I've been losing weight so I'm very happy. I feel a lot healthier now. I've lost another 6lbs now down to 12 stone 9. Got a way to go to reach my goal of 9 stone but considering at my heaviest I was 15 stone 6lbs I'm quite happy. I'm doing it slow and steady losing 2lbs a week.
