What have you eaten today?

Thanks for the advice on the balsamic... What can I add to the diet to avoid constipation? (I'm being pro active) I already drink at least a litre of water a day

That was the first thing that worried me when I started delving into low-carbing! I was frightened I would be bunged up forever... :) Chia seed in a smoothie, with milled flax seed - and nuts and seeds - in small amounts... You can make the Chia into a sort of porridge, or pudding by stirring about a desertspoon into 200ml almond milk, or coconut milk/water - or soy milk (I may not have that exactly right, I just tend to bung it in - sweetener if you like, and in the morning it's a sort of sago pudding.. :) People add cream and berries too - or even raw cacao powder, which is also almost all fibre... Flax seed can be made into bread, along with almond flour - there are loads of recipes online, or I will be posting one on here as soon as I've perfected it... you can have a couple of slices with cheese, avocados or a tsp of jam - it all adds to the fibre intake... and of course there's all the veg... It's all a bit bewildering when you start off, but it slowly gets easier... everyone here will help... :) Good luck....
 
I heard rhubarb is also good. Ground flaxseed? Lots and lots of above ground veggies. Whatever you try, introduce gradually, not all at once

Good advice Tweetypie... :) ... and cook the rhubarb with a scattering of ground ginger and plenty of xylitol or stevia... :) pour cream on it too of course... ahhh, only if you're low-carbing.. :)
 
B: Omelette with mushroom
L: cold chicken salad with spinach, tomatoes, cucumber, handful of walnuts & goats cheese
D: chicken stir fried with mushrooms, onions, peppers, carrots & broccoli & I might try creamed spinach!
S: full fat Greek yogurt, small few blueberries, small pear, baby bel cheese
D: water all day & Starbucks cappuccino
 
Today's menu:

B: Green tea with lemon, greek yoghurt with ground flaxseed and cinnamon
L: wilted spinach mixed with some cheesy beans (most of sauce removed), topped with a baby avocado and shredded chicken (found another great deal on a whole chicken in waitrose this time - £6.00 reduced to £2.00, wish I'd got two now).
T: Will be more of the chicken (not decided on what to do with it yet/in some kind of sauce?), spring greens and spinach.
S: pistachios
D: water and tea with semi skim milk

Need to stop my one bar of dark choc a night and limit to a few times a week I think.
 
B - 3 egg omelette cooked in butter
L - Halloumi salad with olive oil
Snx - few macadamias & will have 9 bar later
D - gonna try celeriac with double cream & cheese & prob tofu & salad & maybe 2 sq 85% choc
 
No I haven't, I've only started LCHF last week... If I can't get my hands on the husks is there anything else?

Start simply by increasing your fluid intake. If you think you drink enough, still add at least another litre a day. If that doesn't help, move onto the other suggestions. With low carb, you need to drink LOTS.
 
Breakfast boiled egg spelt toast
Lunch bacon mushroom frittata and salad from deli
Snack soy cappuccino and dark chocolate.
Dinner the plan is to have a tuna crunch and coleslaw salad
What's spelt bread like? And where can you get it? Is it good on blood sugars?

I get mine from the local bakers - I slice it thinly and freeze it. It doesn't seem to have much of an impact on my levels as I'm usually lower post breakfast. Most craft bakeries will do something like it. Sourdough is another option or dark rye. Just try and slice and test.
 
What's tuna crunch? Sounds interesting......

Not that exciting really. I finely dice a red onion, some peppers, few chopped tomatoes ( you can also use cucumber or celery ) - mix with tuna and mayonnaise and lots of black pepper. Just nice change from tuna mayo as it has a bit of a bite.

Thanks for that. Daughter used to add raw chopped red onion to tuna mayo (great with baked spud :() but then I went off it. Not been able to face it since...but we had it a LOT she was pregnant at the time :D
 
Yogurt and berries
Boursin spread on vegan slices and stuffed in my face in a rush!
Grilled wild salmon and lots of vegetables with a bit of garlic butter.
Coupla cherry tomatoes for some sweetness.
