Hi winnie... I'm sorry I just saw your message, no need to butter and flour the dish, just mix it all directly in the bowl and put it in the microwave oven. that's all :D

It worked perfectly the first time!

I split it in half and made an avocado (1/2) and bacon (1 strip) sandwich. I didn't even have to toast it.

It was SO good. Thank you mehhh2015! :joyful:

Notes: 1 T butter, melted; 1 egg; 2 T flax, ground; 1/4 tsp baking powder; pinch of salt. Stir, pour into dish, then microwave on high for 1 1/2 minutes - (mixed ingredients with fork in glass measuring cup, cooked in 5" round dish with 1" sides).

Sounds really good - need to make it again tomorrow without messing around with it... :) avocado and bacon sounds lush... thanks!

I'm really happy it worked for you winnie, some people don't like the taste of flax, I don't mind it much because my sandwiches always have something that is strong tasting like bacon or chorizo or ham and mustard so I don't feel the taste of flax, I think what makes it work for me is the texture.

With that basic recipe you can make lots of things, I make 1 flax/ 1 almond meal tablespoon plus a tablespoon of milk or water, and make pancakes (like big blinys) to eat with smoked salmon and creime freiche for breakfast as well, it works perfectly fine.

People also makes sweet versions of it, that are similar to cake or muffins if you like that sort of thing, I just happen to be a savoury sort of person. Other people mixes with cheddar or herbs. The sky is the limit.

I just like it simple and easy for a quick morning breakfast, I like cooked breakfasts but when you are working and running around you need fast easy choices for the mornings and since it is sooooo low in carbs and soooooo high in fiber (two very important things when lowcarbing) I prefer it above other choices. My BG meter likes it too ;), so its all good.

mehhh2015, I'm with you. I think my goal is to trade savory for sweet, but I do love sugar, so time will tell...

What is this flax bread called? And how do I search for more variations on this recipe?

It's a lot of fun watching it poof up. Years ago, I'd make Dutch Babies - (milk, eggs, flour, and butter) - in a hot skillet in the oven for breakfast on the weekend (topped with fresh squeezed lemon and confectioner's powdered sugar). They poof up in much the same way as they cook.

Today I went to the grocery and bought sliced ham, provolone, and sandwich pickles for tomorrow's sandwich. I can hardly wait! :)

B... butter, egg, bacon
L... flax bread, avocado, bacon
D... tuna, pickles, mayonnaise, 1 oz extra sharp cheddar; steamed broccoli; one chocolate
S... broccoli, pecans

@Susikav what are "super greens" ?
It's something my brother told me about - hang on, I'll get the bag and tell you what's in it... :) It's from BodyMe, contains organic New Zealand wheatgrass, barley grass, chlorella and spirulina... I feel so much better when I take it every day... I put it in my green smoothie with cinnamon, turmeric and fenugreek... but I like all that stuff - someone else might be sick at the taste - and it looks like pond-weed... :) Today I am having spinach, watercress, a small avocado, goat's yoghurt, all the powders above and a handful of blueberries... I might put a small amount of banana for the potassium too... :) I am having scrambled egg and bacon mid-morning and slow-roasting a big piece of belly-pork for dinner later.. my son and my little granddaughter (in the picture) are coming over for a few days so she will have some crackling... :) I just cannot believe how many years I have denied myself crackling... I will probably snack on fresh fig and goat's cheese at some point... I bought four small figs and won't waste them... I need to check how many carbs in them really...

Good morning mehhh... Some lovely ideas there.... and you're right of course, the stronger the flavours, the less you notice the flax... it is a strong taste... Thank you... :) I love chorizo - forget about it and need to use it... I have a recipe for chicken and chorizo casserole somewhere... I'll look it out and post it - unless someone else has it somewhere?

They were so rich, I couldn't eat all mine, so saved a bit and melted on a piece of warm stracciatella cake for dessert last night! Mmmmmm

Forgot to post yeasterday's food:
B: Green tea with lemon, slice of stracciatella cake with coffee and butter whisked in (still hadn't received coconut oil so had to get from tesco in the end)
Brunch: "Lochs and bagels" (made using the 1 minute flaxbun recipe, cut in half and toasted). Thank you to whoever posted this, I think it was @mehhh2015 ?
Snack: One slice of pizza leftover from Friday, left most of the bread, with guacamole
Sunday dinner: Higgidy feta quiche (left crust), with steamed spring greens. Slice of stracciatella cake, warmed and melted some remaining chocolate pot over, with cream
Drinks: tea and diet coke

Forgot to post picture of Saturdays breakfast as it shows the toasted one minute flaxbun. Mr TP was very impressed, it looks like proper toast!

It is 1 minute flax bun or flax bread just google it and you will come across different versions of the same recipe. Cake in a mug is another term for the sweet ones.

Carbs & Cals book arrived yesterday, sunday.
This is going to be a big help.
The doughnuts that husband asked me to buy are 35g carbs each. Will keep well away from those.
Am I correct, some people are only have approx 50 to 60 carbs per day.
I thing I need to look at my portion size, but I don't know that I could ever get down to 60 carbs per day.

I'm pretty new to this so everything is an experience. Waiting for proper info re my " numbers" from clinic tomorrow.... so.... Breakfast today was 3 egg omelette with garlic flakes, ground onions, grated cheese and double cream and S & P, cooked in lots of butter.. Couple of sliced tomatoes on the side. Cup of tea with fat milk....? Is this ok for LCHF .... I really need to lose some weight too.

Welcome! This is a really great thread that will give you an idea what everyone eats and what works. I have found so many great ideas here and I also like to share my own. Your breakfast looks good, I like to throw in some veggies to an omelette too - mushrooms, peppers etc. Tomoatos are fine but they are classed as eat in moderation - half a cup should be fine as a guide. Fat milk is better than skimmed milk but there also alternatives such as unsweetened almond milk and lactofree which have less carbs. Cream is also good. If you are trying to lose weight, limit cheese and cream as they are very calorific, great for LCHF but may hinder weight loss a little.

The best way to learn is to get a meter, either through your doctors surgery or buy one yourself, then you can test and see what affects your blood sugar. I am sure you'll find so much useful info and advice from people on here too.

Good luck with your results tomorrow!:)
