I am a T1 diabetic and i will never be cured of these disease but i have made great strides in my control over my time with T1 (23yrs). I am however really puzzled by your hatred of carbs. I know from my own experience that when i ate a standard diet my insulin to carb ratio was about 7/8c to 1unit. When i went plant based about 6yrs ago (for ethical reasons) my insulin sensitivity shot up to about 15/20c to 1unit. Over recent weeks i have adopted a plant based whole food diet and my sensitivity is now near 40c to 1 and rising all the time!
I am now convinced, on the back of some pretty compelling evidence that fat is the real culprit in diabetes so why target carbs? I am eating about 600 carbs a day, all plant based and mostly whole foods and i need to take less units than ever!
So, what has led you to the belief low carb is a solution to diabetes? As far as i know T2 is a condition of lack of sensitivity to insulin so why would making you more resistant to insulin be a positive?
I just want to see you T2s out there healthier and happier and i think you might just have it the wrong way around, discuss.
