    Weight training with heavy compound exercises (especially squats), and get plenty of protein (as well as just increasing total calories). I can't think of a more efficient way to gain healthy weight, and not just extra fat.

    Are you on insulin? The sweating and headaches could be sign of going low in the night, and the high readings in the morning could be your sugars bouncing back up in response to this low (the Somogyi effect).
