Last week I decided we'd go Low Carb/Keto at last. We've been 16:8ers for several years.
I made this Cauliflower Mash the other day and it was fab. There was some leftover which we had the following day and it was even better. I think making it a day ahead might be a good plan...
I use this instead of Pasta. Lentil or Green Pea fusilli.
I hope I am right believing it's much lower carb.
Up until recently I've been able to buy Chickpea fusilli which I have also thought is low carb.
I haven't posted for long long time.
We've been 16:8ers for 4 years now. At the outset husband went down a trouser size but for me who's just been diagnosed with an autoimmune disease there was no discernable difference due to steroid intake.
4 years on I have decided we need to cut carbs...
It's only very recently that I discovered the soles of my feet on fire and the burning stabbing pains in the index fingers is possibly down to PN. I am pleased to report that this seems to have relented with the Metformin treatment. I am over the moon as the pain on many days was excruciating...
My last HB1AC was 49.
Looking at others highs and lows, mine seems reasonable for a beginner.
Can someone explain to me why I am not in the higher values.

Slightly muzzy head, grumbly stomach and urgent visit to the loo x 2 per day.
Metformin .....commenced on 500mg 9 days ago, rising to 500mg x 2, 2 days ago.
