Since diagnosis in January 2016 I have not touched bread .. and don't even buy it in for my daughter as she's not fussed.
However, today I was tempted by a half sized loaf of Low Carb seeded bread, so got it and spread one slice with Whole Earth crunchy peanut butter .. as an experiment to see if I could tolerate it.
I tested before first bite (6.2) and then every half hour of the two hours with these results
First reading after half hour: 6.9
Next half hour: 6.6
Then next: 7.2
Final one: 6.6
So what I really want to know is why my results dipped and then rose again ?
Does it usually do this since I've only ever tested the once with any foods?
