Bacon Sandwich.

Hi,
I am a sucker for a bacon sandwich, but as I have recently had a poor A1c result I am trying really hard to be gave myself.
Has anyone come up with an acceptable way to have a good bacon sarnie with a low carb twist?
Low carb bread, bread alternative, any suggestions?

There are a few companies who do low carb bread, it’s not the cheapest thing to buy but it’s handy to have in the freezer when the need hits you, personally I’ve used The Low Carb Food Co, Seriously Low Carb for bread, rolls & wraps, SLC one does a very passable low carb pizza base. I’m just about to try out a fit bakes loaf I got from Amazon- it’s the most expensive at £6 something but it’s vac packed and doesn’t need refrigerated and I want something I can take on holiday with me

If you google low carb or keto bread - quite a few companies will pop up - some more expensive than others. I find it cheaper to do a bulk order as sometimes they have offers and free P&P
 
I love bacon sandwiches too. There are several companies on line that sell low carb bread. I use this one:
There are a couple brands of LC loaves available in some supermarkets, one is HiLo the other is Livelife
 
Just sharing some of my own experiences - When I was doing a really full-on contract-job, I was availing myself of commerical keto breads, tortillas, wraps etc when I wasn't homebaking in my country kitchen, and found them to not have a neutral or good effect on my blood glucose readings. ie they weren't like my homebaked low-carb/keto breads. (minimal ingredients, all low-carb, good fats).

I've had a year to think about this, and reckon it is all the other ingredients, including the fact that I know any kind of wheat product, even highly processed into low-carbdom, affects me badly. Alas! And the Ultra-processed seed oils in them, ditto. Who knows? So many 'other' ingredients that could be a problem, dietary-wise.

My takeaway being then - remember to eat and meter on all your low-carb/Keto bread products. And take a close look at the ingredients, to keep a tab on what could work, or not work for you.

Thank you. Do you have any good bread recipes? I’d much prefer to make my own but my efforts so far have been disappointing.
 
Oh yes I have my favourites. From dietdoctor.com - swedish breakfast rolls. If you are dairy-tolerant as sour cream is one of the main ingredients. Very yummy. Whatever seeds you are partial to.

A new recipe I've fallen in love with are keto rolls, made with psyllium husk powder (along with almond flour of course), to puff them up, and egg whites, making a very crisp exterior and light and fluffy interior with vinegar doing its thing too - fabulous with lots of butter. I'll find out next time I'm near my recipe books which website I got those off - they had keto bread loaf recipes that I have also tried and were good, but I favour rolls for the convenience. So I will post those Keto cooking websites anon.
 
I’m not keen on low carb bread as bread, but I occasionally have a bacon sandwich with it toasted. I do enjoy that.

I buy bread and wraps from the Seriously Low Carb Food Company.

I fry up a small tomato at the same time and add that for extra flavour.

I been testing all sorts of breads and snacks since I found out I was diabetic.

Heylo are my go-to so far, but I am open to suggestions!

The 3 products I like from them:
Keto Bread and Rolls
Keto Granola (This is a life saver!)
Keto Bagels (Didn't expect to be able to have bagels while being diabetic!)

Everyone is mentioning the lowcarbfood company, so I will check them out! :)
 
I'm back country-side, and post diagnosis lower-carbing recipe books at hand, so here are some recipe suggestions as promised -

First of all, my all-time favourite, if you are missing the deliciousness of bread, is a Sarah Wilson from Aus-fame, as part of her 'I quit sugar' series (1 and 2, this is from number 2). I made this for me and my non-diabetic daughter coming over for lunch when she was at uni a decade ago, when I was learning how to cook and eat lower carb. It's divine, but only moderately lower carb, at nearly 8g of carbs per slice (due to the arrowroot powder, which is what makes it fluffier). But you only need one slice it's so filling and nutritious. vIt's called the 'Paleo Inside-Out Bread', and has food in it, as in zucchini, diced ham, cheese, and 5 eggs in the recipe. A nice entre into the lower-carb world at any rate, I found.

The keto bread recipes are, conveniently, all diet doctor as well, and found free online at dietdoctor.com. The Keto Sesame Bread for an actual loaf, otherwise my favourite the Keto Bread rolls are so good you can share with non-diabetics quite happily. (I did, just yesterday.)
 
For a cold sandwich I use iceberg lettuce but for a warm one I make a wrap of beaten eggs with some fibrous flour and a bit of water to thin it out. I have psyllium flour at the moment. I cook the batter in a ceramic coated frying pan, let it sit until cool enough to handle, add the filling and roll it up.

I have to say... that doesn't sound too fun :)
 
Id recommend unless on a strict low carb diet of under 50 or under 50 carbs then have your sandwich just don’t hammer loads of them

A bacon sandwich as a meal won’t hurt in the big picture if the rest of your diet is ok

If you are keeping to under 50g/30g - goodbye sandwich - fry up some bacon and eggs and enjoy with no bread
