Bacon smoked or Unsmoked

My butcher used to have the most fantastic thick cut, streaky bacon in both smoked and unsmoked. 1 rasher was about 30cm (a foot) long as was all you needed. Sadly the supplier went belly up last year and the replacement is nowhere near as good (even he agrees) but he's got to stock something

@Resurgam Very good idea! Maybe this could even remove some of the added sugar? I have searched in vain in supermarkets for bacon without nasties.

Sugar is soluble, so yes - though the bacon I get is unsugared.

Nitrates and nitrites are also soluble, so they end up down the sink too, just a minute or so simmering in hot water should do the trick.
