Can't believe I'm posting this

So back in early May I was diagnosed with Type 2 diabetes.

I'm 38 and found it really hard to accept. If you go back and look at my posts you'll probably see that.

My mmol was 97, and in a test a couple of days later to confirm, 99. I believe that's around 11.2% in old money. I was given 500mg of metformin twice a day, which I'm still on.

I bought a Libre 2 and have worn them since. I tracked my blood glucose, sticking to the rule that if I ate a meal and my blood didn't come back down to 7.8 or below two hours later I'd rule it out, or drastically reduce portion size. I reduced my carbs, and found I had a decent tolerance to some of them but not others. Noodles and pasta and rice don't help me at all, but bread and sweet things (eaten on occasion) see a spike that's brought in line under the target. Everyone really is different.

I had lots of advice from this board, and tbh I didn't want to hear some of it. But I ate to my meter, had the odd relaxed day and mostly tried what I could to stick to my rules. I lost a few lbs and generally feel better (though it was literally just a few lbs unfortunately!)

Anyway, I called the doc today for my hba1c result, and I'm down to 31 mmol. From 99. I can't believe it.

I plan to continue what I'm doing, but I wanted to post this because three months ago I felt unbelievably down and ill-equipped to make the changes. As a vegetarian for who carbs made up a significant percentage of their meal, it was tough reducing them. I'm so pleased I can still handle some things though, and a level of carbs I'm happy with. I probably eat 150g or so a day, so very manageable for me.

One of the key questions I had a few months ago, was what can I eat. If you're new to this, like I was, and vegetarian, here's my meal list for this week. As I say, everyone is different so not everything will work for everyone on this list, but these are all tried and tested for me:

-Paneer curry w/ cauliflower rice and poppadoms
-Taco bowl (beyond mince with taco seasoning, black beans, sweetcorn, salsa, guac, sour cream, grated cheese, cauli rice)
-Quorn cheese and broccoli escalope with Birdseye veggie power (frozen box of different veg and grains)
-Stir fry with spicy japanese curry sauce, edamame fried in garlic and This Isn't Chicken Tenders
-Greek salad with hummus and falafel
-Beyond sausage, sauerkraut and salad

And there's way more I enjoy. Not even sure I miss stuff, and if I do I just have a tiny bit and the craving is gone.

Still enjoy a few beers, more whisky but avoid cocktails.

Anyway, this may have helped me and given me hope three months ago so I hope it does for someone else.

What a fabulous post! Well done, enjoy your success, try not to get complacent just keep doing what you’re doing again very well done :)
I can’t afford to go back to the way I was for sure - not least because I genuinely feel better now. I didn’t realise how rough I felt day to day until I started getting a grip on my diet.

I think I’m probably quite fortunate that I can still have the odd treat and my body handles it within the recommendations.

Very well done. I have always imagined it is quite tough if a vegetarian .
 
A fantastic story.
I am especially pleased that you eat a vegetarian diet: there have been too many posts from carnivores saying low carb is "difficult and limiting" for a vegetarian diet.

I hope you stay on the forum and use what you learnt to educate these carnivores and new vegetarians.
