Got my diagnose 2 months ago, my blood sugar was 16 at that time.

Have since minimised carbs and bought myself a mountainbike that i use almost everyday. I take no medication at all just lowcarb and excersise.

My bloodsugar is now always below 6 and i have lost 15kg (from 130 to 115)

Im not superstrict lowcarb, i eat whatever my glucosemeter allows me to eat. Carrots is for me a lifesaver when i get hungry but its not allowed if you read lchf guides.

So can i continue eating carrots or should i try to minimise/quit eating them?

I would say - do whatever works for you . If carrots do not cause a problem then don't worry about them. I add the odd carrot int my diet and it doesn't seem to cause a problem - if fact somewhat less than for example cauliflower - probably because for me the natural portion size for carrots is lower than for cauliflower.
 
Sounds like you are eating to your meter which is exactly the best thing to do for you. We are all individual and react in different ways to different foods. If you're happy with your "post carrot" level then go for it!
 
I used to love carrots. Then I became T2. They have a very high GI. I don't eat them. Sorry - short answer. I also keep away from other fruit and veg (not all, just nearly all). I do eat spinach (good for blood iron and vit c) tomatoes (colon cancer is a family disease), lemons (kidney stones) and the bananas (for my heart). If the gout flares up, I will drink some weak cranberry juice.................but no carrots

Good luck with your journey, diet and exercise is definitely the way ahead

If they work for you then no need to stop eating them there are no rules as to what you have to stop eating when doing low carb everyone is different as to what they can eat or not so eat what suits you
 
Now I'll fess up I HATE CARROTS and never ate them even before diagnosis.. so Type 2 was a great excuse never to have to eat them again! I knew there were some positive aspects!
 
We are all different Sean can eat bananas but they would send my BGS into orbit Test and see is the only way to know how carrots effect YOU !

A carrot straight out of my garden, dirt wiped off had little effect. But then it's just one and not too large.
I have never been a fan of cooked carrots so I have never tested them.
 
@Vidgren Just keep dong what you are doing, losing the 15kg (by eating controlled carbs plus moving move) would have made a real difference to how hard your body has to work at BG control.

The main issue is refined carbs and wheat, I expect that most people with Type2 would be a lot better if they just excluded all refined carbs and wheat along with having no ready meals etc. (Fish that looks like fish, meat that looks like meat, and veg that looks like veg.)

Remember Glycemic Load is a lot more meaningful that Glycemic Index (GI)

Carrots have limited carbs and lots of fibre and every time I have raw carrots as a snack I am not having something worse…..
 
I love carrots and will sneak a small amount with no real spike. I do, however, make them steamed and smothered in butter and dill. The butter may help and it is yummy :D
 
I believe carrots are off the menu during the "resolution phase". By resolution I mean getting your blood sugars potentially into non-diabetic levels, draining visceral fat from both your liver and pancreas (if you buy into this hypothesis, I do), basically improving your insulin resistance. I have eaten carrots up to 3 medium to large for around 9 months with great results; I just wash them and slice down the long side into 3rd's and roast them (which does increase the glycaemic load, so test) with leeks and other vegetables.

Many have found that once they get good control some foods can be re-introduced, as ever eat to your meter. With your excellent progress already it is likely that your metabolism has improved which will again help crush extra glucose in the system. Yesterday after my dinner at circa 16:30 I had my usual bowl of berries, nuts, and Greek yogurt, I added as a one off this week a quarter of a supermarket cherry pie. When I took my daughter to Karate, I walked for 50 minutes at high intensity, followed later in the evening with what I call the "punisher" - Karate and Heavy weights (specifically to target the cherry pie), today woke with a fbg of 4.3.
 
All I care about at present is that my medium fasting BG and my medium 2h after dinner BG are clearly lower than the week before. I can do this while still eating carrots. (From 17 to mostly under 6 in a little over 3 weeks so far, but taking met so not just low curb.)

Wow that is fantastic progress in short time. Your doing what works for you.

I will continue to eat carrots as long as my bloodsugar stays below or at 6.

I eat them raw with sourcream 40% fat + vegetablespice.

I cant eat em during the day tho because i get sugarcravings.

Do you eat them as a snack at night?
Too calorific with sourcream for me though, anytime.
 
Yeah evenings.

Sourcream is low carb so it seem to work for me
