Celeriac

Our favourite recipe is celeriac fritters/hash browns, eat with a fry up or on their own with a dip

Had roast pork last night and had celeriac and swede cubed and sauteed in butter cabbage kale and caulli Who needs spuds :D

:) Celariac..... THE best thing since...... What a fab veg! First I tried a little piece raw, and recognised the taste, so I must have had it before, it's delicious! I then decided just to boil it and mash with butter and pepper. It was very good too. I gave myself half my usual dose of insulin lispro (am type2), enjoyed a dinner of celariac, broccoli, sprouts and turkey breast, followed by probiotic yogurt with raspberries. Two hours and a dog walk later my BG was 6.2. Brilliant! Think I like this low carb thing ;) Thanks guys x

Thanks for that tip. I eat celeriac in salads and use it in stocks but have never before considered this. One of the dishes I miss is rösti or reibekuchen because they use potato, so I wil give them a go with celeriac.

I PMd you the recipe, we had the hashbrowns with smoked salmon and horseradish dip for lunch yesterday, delicious, hope you enjoy
 
Thanks for that. I've had a look and see that they are baked. The potato dishes I mentioned are fried. It should be interesting to see how they crisp up. Crunch is all important. I bet they will taste good with cream cheese and chives.

Daaang, those look and sound amazing. I'd probably have to throw some spices in and serve with a sour cream + garlic dip. Mmmmm definitely feeling inspired by this!

Yes, they come out nice and crispy.
 
I make colcannon with celeriac instead of potato
To make it I combine cold mashed celeriac ( celeriac, butter & loads of black pepper) with cooked cavalo nero or cabbage, spring onions and bacon
Shape into pretties, gently fry in butter and serve with crispy unsmoked streaky bacon

Thank you, that sounds very tasty. Good with cold meat on Boxing Day :)
 
Made a very lovely bubble and squeek with some leftover celeriac mash, onion and savoy cabbage yesterday, was. Gorgeous with some roast partridge and gravy
