Thanks for that tip. I eat celeriac in salads and use it in stocks but have never before considered this. One of the dishes I miss is rösti or reibekuchen because they use potato, so I wil give them a go with celeriac.

Thank you, that sounds very tasty. Good with cold meat on Boxing DayI make colcannon with celeriac instead of potato
To make it I combine cold mashed celeriac ( celeriac, butter & loads of black pepper) with cooked cavalo nero or cabbage, spring onions and bacon
Shape into pretties, gently fry in butter and serve with crispy unsmoked streaky bacon
