Chia seeds, need some more ways to eat them [emoji3]

I have recently started a LCHF diet as been told 5 weeks ago that I’m Pre Diabetic. I have only found out how amazing chia seeds are and soaked them in coconut milk overnight and ate for lunch etc, they are amazing!
Would love to know some other ways of eating them, if any others have good receipes. Thanks

You can add a small amount of cocoa powder to make a chocolate version

Diet Doctor website has a recipe for Seed Crackers using chia seeds.These are great for cheese,I tweak the ingredients and add nuts to the chia seeds and if I'm feeling indulgent smooth a little 80% melted chocolate on them for a chocolate biscuit.

I make nutty crackers, substituting flaxseeds with chia seeds. They also contain sesame seeds, sunflower seeds and pumpkin seeds. Yummy, but maybe even more yummy with @Glenmac's idea :)

What do these things taste like because they look like stuff you'd put out for the birds?!

They really don’t taste of anything at all, when soaked in the coconut milk they take on that flavour.

I use 4 tablespoons and 1 can of coconut milk, half teaspoon of vanilla and leave it in the fridge overnight.
Do you warm the coconut milk before soaking the chia seeds? Sorry for all these questions

I also use chia seeds to make no sugar raspberry 'jam',recipe again from Diet Doctor website:)This is great stirred into Greek yoghurt.

I use them to make chocolate pudding. Recipe for four portions:

120 ml double cream
240 ml unsweetened almond milk
25g cocoa powder (highest cocoa content/lowest carb you can find)
33g erythritol (or 25g Xylitol)
64g chia seeds

Mix everything together in a jug, pour into ramekins and put in fridge, preferably overnight. These quantities make the pudding set firm and the consistency is a bit like a dense mousse. It’s not particularly sweet so up the sweetener if you want it sweeter. Delicious served with extra thick double cream.

I just tried this this week, I cut a low carb muffin in half, spread it with this ‘jam’ and ate it with cream. My own little low carb Victoria sandwich :hungry:

I used to soak overnight in almond/hazelnut/soya/coconut/cow's milk and add to porridge until I found that porridge spiked me.
Now I soak them and add some strawberry/chocolate/banana milkshake powder for a pudding, with double or whipped cream.

Milkshake mix? That’s a good idea. I might try sugar free Crusha milkshake syrup for flavour :hungry:

I may still try it as I enjoy the Crusha as a drink with unsweetened almond milk.

Wow, love all these ideas!
My standard is 3 tablespoons of Chia seeds overnight in 1 cup almond milk, then 130 grams of Greek yogurt, 2 tablespoons of Flaxseed, 2 tablespoons of pepitas, and 30 grams of raspberries. Low carb, quite filling with protein and fiber.
