I think I've finally got it

Diagnosed Type 2 about 3 years ago, I haven't been consistent testing my blood, the last time I saw my DN she said she was happy with my blood glucose at 8, I've never had a reading under 8, I'm a retired chef and thought I knew all about carbs etc. So when my husband and I stopped somewhere for coffee I'd maybe have a cheese scone or something , sure that it wouldn't hurt or maybe I'd have a couple of Yorkshire puddings with lunch. Last week I had two slices of wholemeal bread tested 2 hours later it was 15!!!! So I started testing every day and discovered my blood glucose was consistently high if I ate any obvious carbs.......so bread, potatoes, rice, pasta , anything with flour as an ingredient.....this week I have cut out all carby food and I mean all, today for the first time , 2 hours after each meal my blood glucose has been under 7, for anybody else struggling give it a go
 
I found that once I started to see readings under 8 and if I stuck to low carb foods, the readings went down to under 7, sometimes even lower.
The low carb eating really works.
Seeing what causes spikes and what doesn't really helps too.
There are some good recipes using low carb ingredients on the internet - even such things as breads but made with seeds and nuts to be low carb - people have been experimenting for some time to try to get low carb variants.
I bought a doughnut maker recently so I could cook tiny little rolls - I have decided to wait another month so as to be one year from diagnosis - plus the Lidl rolls are on offer again so I stocked up...
 
As a ex cheff, you may find "Tom Kerridge's Dopamine Diet: My low-carb, stay-happy" a useful book as it is all about great low carb food.
 
It's so difficult and takes a lot of willpower as cafes/restaurants just do not cater for low carbers which surprises me as it's becoming a way of eating for many people not just diabetics, as we have a holiday place near the coast it's a case of go without for me, I'm fine at home and cook suitable low carb dishes , I used to eat the lidl rolls but after a while found I didn't really like them, I think I miss bread more than anything else, but this is the way it has to be for me , I read so much about the subject my husband thinks I'm becoming obsessed, he's probably right
 
Have you tried the mug muffins - 90 sec cooked in a mug with either a couple of heaped teaspoons ( or level table spoons ) of almond "flour" or coconut "flour", an egg , quarter of teaspoon of baking powder a dollop of olive oil mix together put in a mug and microwave for 90 sec . Quite nice alternative to bread if eaten with butter , cheese or on their own .
I have tried various cafe and found that if say they have a ploughman's they are happy to give it to me without the bread , or some cafes( usually the greasy spoon ones ) do very decent omelettes or all day breakfasts ( minus the toast / beans ) . I agree the tea and cake cafes can be a bit of an issue but one cake can be reasonably low carb option as a special treat
is a almond and orange / lemon cake . It does not spike me ,however, we are all different so what works for me may not work for you.

When eating out in restaurants I go for gammon and egg, or steak and ‘chips’ but ask for the chips to be substituted with a salad. I haven’t been refused yet.

Thank You I've seen recipes for the mug muffins I will give them a go this week, I don't have much of a sweet tooth so I'm not to worried about cakes though if I come across an almond cake I might just make an exception then a blood test to see how it affects me.... it's the savoury stuff I crave ,but I'm determined to stay on track now

Hallelujah, an actual professional seeing the light.
We have seen Dr Unwin from the HCP start a whole new movement so can we now see a foody change the minds of diatitians anytime soon?

If we eat out I normally have a chicken dish but that's getting boring, last night I had a steak ( something I never eat ) I exchanged the chips for vegetables and thoroughly enjoyed it and no effect on my BG so now I'm looking forward to having that again

I second this, it can be esoteric and perhaps meals can be expensive on a low budget, but it is a great resource if variety is required.

I Dont like many TV chefs but i do like Tom Kerridge, I knew he'd lost lotsof weight but didn't know it was through low carb....I have just ordered this book, thank you

Look up vegan herb crackers on the same site. So delishous I had to stop making them. We piled through them. Favorites were sage and lemon zest, rosemary and garlic and just oregano. Super easy to make. Almond flour, olive oil and water. That's it. Then your choice of herbs and flavorings

I never made the bread but made the recipe into 4 large muffins. Half was enough for me.

It can get expensive with almond flour but I would use half bobs red mill and half very ground almonds from the baking isle. Laws of average haha
