Ideas for a LC something to dip into soup?

While I'm not missing my pasta, rice or potatoes at all, I do miss bread. It's a wet, cold day here and I fancy soup, but I'd also like to have something to dip into it. Any ideas?

I porbably won't have the ingredients to make anything today mind, but I've been reading up on different types of flour so am happy to invest in some and experiment for future use, espcially if I find stuff I can make and freeze.
 
I miss dumplings.

Not that I ever got to enjoy them often. but I loooovvveeeedddd them when I did.
Never seen a low carb version that floats my boat. they all look like small lead pellets, more likely to sink than to float like little clouds of succulent gorgousity.
 
I just dipped buttered almond and cheese bread into my soup this lunchtime and it was very nice - didn't crumble or fall apart, was quite bread like I think!

It's somewhere on the forum but this is it:


Cheese and Almond Bread
Makes 1lb loaf

10 1/2 oz (300g) ground Almonds
1tsp baking powder
2oz butter
5 1/2 ozs (155g) grated cheese
3 beaten eggs

Combine all ingredients in food processor or bowl, quite a stiff mixture, place in loaf tin.
Bake at 180º 50mins


I make a loaf every couple of weeks and eat most of it warm out of the oven!
 
And there was me thinking I couldn't manage to fit any more pork products into my diet! Next someone'll suggest pork scratching - or is tht on another thread?

No, I want something to soak up the soup. I already like slices of cheddar dipped into minestrone, but some hearty soups seem to scream out for a chunk of bread. Must be the medieval peasant in me!

How about Bergen bread? 9gm a slice!

I make chicken goujons with pork scratchings instead of breadcrumbs - can't remember if I found that idea on here or not though - but they are lovely!
