Hi all, greetings from Canada, I'm not diabetic but the wife is, T2. She is 72 and I am 78. She is taking tablets prescribed by her doctor.
However, my problem comes from her Dr. saying she cannot eat potatoes, carrots, parsnips, pasta, rice or bread. This would tend to rule out the sandwich lunches Tuna, cheese, egg, cold meat, bacon etc.
Main meals, evening, are not a problem as I have a number of diabetic recipes that I rotate through and vary somewhat.
Bearing in mind the fact that in the wilds of Canada we are restricted to not being able to get fresh lamb, rabbit, smoked fish and all those things we took for granted in the UK. Salads and fresh fruit here are tasteless and hardly filling. We do grow a lot of our own vegetables, which get frozen or canned in season. Surplus beans get dried and stored.
I have made almond flour and flaxseed bread, but it is more like a thin, one and a half inch, cake. Tastes ok but not really something to spread tuna or egg upon.
Has anyone any suggestions as to what the substitute for the sandwich lunch can entail.

Hi @sheepshanks and your wife, welcome to the forum.

A lunch of those things all by themselves sounds very tasty to me!
Alternatively, lettuce leaves of any variety do well as a vessel to carry traditional sandwich toppings.
Or make a very thin omelette and use it as a wrap, very tasty and easy.
