The basic diet of meat fish eggs cheese and low carb vegetables are fairly easy to cook - they used to be standard everyday items.
Watch out for recipes devised to correspond to the usual levels of sweetness people expect these days - they can be really sickly sweet once you get used to low levels of sugar in your diet.
The Low-Carb Diabetes Cookbook by Dr David Cavan and Emma Porter is excellent. It contains "100 recipes to help control type 1 and reverse type 2 diabetes."
