Low Carb Recipes


I think I'd prefer instead of using ground nuts perhaps to just pieces of nuts. How do you think that would work?
 
Stuffed Chicken **** Wrapped in Pigs ****

Chicken breast, slice and make a pocket then stuff it with mozzarella, sundried tomatoes, basil leaves and a smear of garlic. Wrap 2 slices of smoked bacon around the stuffed breast and skewer with wetted toothpicks to hold it together if needed.

Put on a baking tray on the middle shelf of a 200c pre heated oven with roughly chopped onion, pepper, mushroom and tomatoes (I usually put the chopped veg in a large bowl to coat and mix in olive oil first, plus season with what you prefer)

Then leave it in the oven at 200c for 25-30mins...done.

(You may find that it is handy to mop up any water from the likes of the baked tomatoes/mushrooms when you give the veg a turn halfway through, to help bake the veg instead of steaming it. or do them separately if you wish)
 
Just been looking at all your delicious recipes, but can anyone help me with quick meals that are healthy, low carb as haven't got time to cook from scratch??? and able to buy in supermarkets please Xx

There are many combinations. Grilled meat/fish/sausages with salads the easiest. There are not many ready meals but you shoild be able to find a few. Just go yo supermarket and look at the labels of ready meals ( cauliflower bake, chickrn wings, chicken breast wrapped in bacon). I think m&s has the biggest selection

Needed some stodge tonight so made low carb toad in the hole and low carb cauliflower cheese.

6 sausages
40g soy flour
1 tsp mustard
3 eggs
100ml milk
Needed less time than it had - about 20 mins sausages then half an hour more with the batter.

500g frozen cauli, microwaved for 10 mins then half whizzed up with mature cheddar and a spoonful of Philly, other half left as florets. Mixed together, sprinkle more cheese, cooked.

Total in the whole toad as pictured: 10g CHO
Total in the whole cauliflower cheese: 20g CHO

Scrum. Stodge factor not quite like flour-based toad but next time I'm going to use half soy flour and half ground almonds instead of 40g soy.

Flaxseed savoury crackers:
2 tbs ground flaxseed/linseed
6 tsp water
1 tsp herbs.

Mix dry together then add water and mix. Leave 3 mins to absorb.

Roll between two grease proof sheets to 3mm.

Cook in microwave for 2.5 mins.

Allow to cool.

And for a sweet take on it:

2 tbs ground flaxseed
1 tsp sweetener
1 tsp cinnamon
6 tsp water.

As above. This got burned a bit but I ate it anyway with cream and it was like a brandy snap! Edit: tried again with liquid stevia and cooking it for 2 mins initially, then a further 20 seconds. Came out really nicely!!!


This will be my go to dessert from now on
