Coconut Chocolate Stuff ... or "Almond Bark" by Rose Elliott!
100 grammes coconut oil (Always use virgin pressed)
100 grammes ground almonds (I use a blend of low carb ground nuts - including macadamia nuts!)
25 grammes pure raw cocoa powder
25 grammes granulated sweetener of choice (I use xylitol)
Melt coconut oil (this doesn't take long)
Throw in cocoa and mix well so you have chocolate oil
Stir in sweetener and allow to soften / disolve (whatever your chosen sweetener does!)
Stir in nuts
Mix it all really well and scoop/pour into plastic tub and allow to cool (coolest part of fridge) for at least 90 minutes
When set, cut and leave another few minutes before serving
If you want to eat chunks like fudge use a slightly smaller tub or if you want chocolate-like slabs use a large flat tub
Originally from Rose Elliots Low Carb Vegetarian (an excellent book) I adapted the recipe slightly

* zero impact on blood sugar
* beneficial compounds in coconut oil (yes the fat is saturated but it's the right molecule)
* beneficial compounds in cocoa
* almonds are known to reduce cholesterol
* tastes amazing
* unbelievably fast and easy to make
* makes 21 large servings

There are many combinations. Grilled meat/fish/sausages with salads the easiest. There are not many ready meals but you shoild be able to find a few. Just go yo supermarket and look at the labels of ready meals ( cauliflower bake, chickrn wings, chicken breast wrapped in bacon). I think m&s has the biggest selectionJust been looking at all your delicious recipes, but can anyone help me with quick meals that are healthy, low carb as haven't got time to cook from scratch??? and able to buy in supermarkets please Xx

Just had this with chicken for tea! Omitted the oxo and wine with no real differenceCeleriac Boulangère
1 celeriac, peeled and thinly sliced
50g salted butter
Garlic (I used garlic paste)
½ teasp Thyme (fresh or dried)
½ chicken Oxo cube
Freshly ground black pepper
Splash of dry white wine
Grated parmesan
Boil the celeriac in salted water for 5 minutes. Strain well.
Melt the butter, add the garlic, thyme, Oxo and wine, and mix with the celeriac until it is coated.
Using a slotted spoon, transfer into an ovenproof dish without adding too much of the melted butter.
Top with parmesan and black pepper.
Bake at 170C for 20-30 minutes, until browned,
Serves 2
Cals 97, carbs 2.4g per serving
