Lush green soup

the daily mail had a supplement yesterday about Alzheimer's- we inadvertently got a copy of it delivered with our morning paper (we don't buy the daily fail) in it was a interesting recipe for gorgeous green soup - I have made it today for lunch and it's very nice - I did add a few chilli flakes as I like a kick
At 8g carb per portion it's a great low carb and full of good stuff

4 spring onion chopped
2 cloves garlic crushed
1 large courgette chopped
1 avocado chopped
85g spinach (I justed shoved the whole bagful in lol)
Juice of half lemon
1 veg stock cube
500g water
Salt and pepper to taste
Oil for frying


Fry the spring onion and garlic till soft (this is when I added the chilli flakes) add the chopped courgette, water and stock cube and simmer until courgette is soft, add the spinach chopped avocado and lemon juice and simmer for 1 minute to wilt the spinach
Blend and serve

This make 2 good portions and is quite thick and rich - you can finish with a blob of cream or a drizzle of oil

That sounds.lovely. I eat a lot of.soup, always looking for.new ones. Thanks.
I just eaten it and it was really filling - I drizzled some chilli and lemon oil onto it and a sprinkling of sliced almonds for some texture - really good - if you make it let me know what you think :)

I love homemade soup and this sounds delicious :)

I've just been thinking about starting to make soups again for the colder weather, and this definitely sounds like one I should add to my collection. I make my own stock so I'll use that with this recipe, and I'll probably add some grated parmesan to top mine off...

ETA I've name this "livinglife's green soup"- in my recipe file....

PS Talking of Ocado, I just found this offer yesterday which I thought (at that price) would make a good basis for a couple of soups...
