Massaman Curry - what to replace the potatoes with?

Another vote for butternut squash, it works really well.

It’s one of my favourites out of those suggested. I make ‘lasagne’ with butternut squash slices in place of pasta and also butternutsquashetti bolognese!
 
Chunks of swede? I love it mashed with butter and pepper and it doesnt affect my numbers like carrots do.

I can tolerate swede too and carrots. I always keep Tesco mashed carrot and swede in the freezer!
 
Another vote for celeriac. Or baby turnips? Not often seen but they're not as strong as the grown-up ones and kind of work as a substitute for the new pots.

Massaman with potato is more common nowadays, but before potato became widely available in Thailand, yellow-fleshed sweet potato was a classic ingredient.
 
I’ve decided on butternut squash and I’m making it tomorrow. I’ll update on how it turns out :hungry:

I’m going for cauli rice this time but I might try kale next time, I haven’t had kale since I was a kid and my dad grew it in the garden!

Fascinating as this thread Massaman curry something I eat often in Thailand it is cooked and prepared with the potatoes in and I just leave them out of my serving I eat mine with Rice Noodles (which strangely do not spike me whereas Rice Does ?
 
I LOVE Massaman curry. I'm going to have a go at this myself.
