Hi everyone, im new here! I have a problem.. a family of very picky eaters. Im a type 2, my hubby is too! We have a 16 year old at home. Now hubby hates veggies, he literally picks veggies out of everything, very much a meat eater. Ill eat anything! And son is picky. I struggle with meal times! Never know what to cook, and trying to keep it healthy. Recipies please!!!

So, you have two diabetics in the house and picky eaters... Yeah, that can get a bit stressful at mealtimes! Good news though: Meat, provided it isn't over-processed and stuffed full of carby fillers, can help his blood sugars. It's just protein and fats, and those don't spike a diabetic. There's actually a carnivore diet that consists solely of animal protein (meat, fish, eggs, dairy) that just about works miracles on blood sugar control. It's an extreme example though, but I'm mentioning it purely so you know just eating animal protein/fats isn't going to harm his diabetes. If eating right, without overprocessed stuff filled with starches and the like, it could well improve it. So maybe that's a worry less.
In this household, there's the diabetic (moi), and the non-diabetic (my husband). We practically eat the same meal, except that he gets spuds and I get (for instance) salmon, besides the sausages and broccoli with cheese this evening. I don't have to cook entirely different meals for us, I just shift the proportions some. So you get more above ground veg (under ground is usually more carby) and so does your kid, your husband joins in with a double helping of meat which you and your son might have a little less of... Just try to make things that fit you all and don't give everyone the same amount of everything. Veg that goes cold having been placed on the edge of the plate, could've been enjoyed on yours. I don't know how picky your child is, and whether it's simply "being picky" or ARFID, but there must be work-arounds there somehow, too.
Anyway, try checking out dietdoctor.com, lots of info on there is free and they do have loads and loads of healthy recipies there, suitable for diabetics. Maybe something'll help. And if you're worried about your husband's vitamin intake, maybe have a blood test done to check for deficiencies, maybe start supplementing accordingly, if there's a need for that. You sound very, very worried and there are solutions to this... Though it might take a little effort on the side of your family, but if you let them know how at your wit's end you are... Maybe they'll be willing to pitch in. (Or go on strike and don't cook for anyone but yourself, haha! See how long that lasts...
