My low carb/IF Diet - BG and progress

I really think the OPPO ice cream is over-rated.
The caramel one was sickly sweet, and the mint choc chip was powdery / grainy. At £4.99 for a small tub, I would in future leave it in the freezer and go and buy the same size tub of fresh cream for less than a quid. Then make my own ice cream with that. Ewelina, a member here has some particularly good recipes.

There we go... Could to have a range of views:)

I teaspoon full of Haagen Dazs is a better option for me.

I've transferred the Salted Caramel Oppo into an empty tub of Ben & Jerry's to try and fool someone into eating it....

I am thinking the combo of peanut butter and fresh cream could be a good start for an ice cream recipe.
 
It's easy enough to be fair - just involves a lot of washing up. Make a custard using egg yolks blended with xylitol and mix in full fat milk and cream stir until oats back of spoon over low heat. Then add any flavour you like. I've made lemon and strawberry with bit of balsamic. Then make coconut macaroons with all those egg whites!
 
I quite like my cheesecake fluff. It's obviously not ice cream though...I will find it a challenge to lay off the ice cream while I'm galavanting around over the summer with my kids who will indulge. I think that'll be the toughest part of the summer.....

Would you mind explaining again for the slothful me?
 
Mix whipped cream with beaten cream cheese, add a flavour - I like hazlenut, lemon, vanilla or peanut butter. Leave I fridge couple hours and voila! I decant and freeze it - it does curdle and isn't as good as fresh but I don't mind!

I find Oppo the equivalent of Walls (remember 70s bright yellow Walls icecream?).

It is icecream, so that earns it brownie points, but compared with quality icecream it falls far short. But then, I have only tried the salted caramel, which I found bland. We bought 2 tubs, ate one, and the second tub is languishing, while I have returned to berries and cream, or choc and peanut butter as occasional dessert-type treats, both of which have far more intensity and character. :)
 
Today, based on how well I think my low carb diet is doing, I decided not to take my meds. (although having them handy); and to record my BG prior to a meal, and then 120 minutes after each meal, having a fasting BG of 5.4 when I awoke at 06:00.
Just thought I would share my results with other members,

08:45 PreBreakfast BG 6.8
10:45 Post Breakfast BG 7.9
13:00 Pre Lunch BG 7.4
15:00 Post Lunch BG 6.3
18:00 Pre Dinner BG 6.1
20:00 Dinner+120 BG 6.5


This is such a tonic having had 2 years of never seeing less than 10, and more commonly 12 to 15mmol /L even after taking my meds. This may take me a year or so to crack, but at least I am learning what and how much to eat to take my readings back to the "norm".

I found testing after an hour really helped me identify foods that really made my bg spike. Porridge was one that appeared fine at two hours but was a massive 11 from 5 at an hour - far too high to be acceptable for me. It's a pain but I built my menu plan around it so rarely need to test food nowadays unless it's something new...

Annoyed! FBG this morning was 6.7. I'd have expected it to have come down more than that after the weekend's splurge and still fasting. Slept a bit better last night but feel like I could sleep for a week!! Maybe the sore throat has something to do with it too.

Oh and I walked my friend's dogs for an hour yesterday. What a rubbish FBG!!

A 6.7 FBG is still in the "normal" range Debmcgee! Take heart, it could have been a 12 or something.I regard anything under 8 as a welcome visit. Just what readings are you "expecting"? Maybe you are being too hard on yourself?
 
I go by 7 being the worst for me - that's proper diabetic. Anything less is ok but ideally I'd love low 5s.

"proper" diabetic? Before Meals 4 to 7 mmol/L and 2 hours after meals < 8.5 mmol/L are the standards as I understand it., thus I am happy with an 8!

Found Oppo - had a third off in Co-op so got mint and salted caramel. Tasted it and it's nice but def not Haagen Dazs!! I'll just have a spoonful at a time when I feel like ice cream x

For FBG it's over 7 x

So want to offer support Debmcgee, yet my GP was unphased by me being 8.4 on a fastingBG because that was a positive improvement on where I had come from. More importantly, I recently reported a day's testing that never strayed outside the "norm" range. I attribute this ONLY to my new found low carb diet causing positive changes in both my BG and Blood pressure. Just fight temptation to yo-yo and you will also see positive results. (Another tip "Bluetit" handed down to me was to keep a spreadsheet of my daily readings and my macronutrientsincluding FBG, FBP, pulse,Weight, BMI, Cals, Carbs, Sat Fat,Protein,Fibre, Sugar,Cholesterol, Iron, Calcium, Salt and Potassium. These are my guiding light and keep me feeling positive, as I see improvents weekly in my readins in my endeavour to have a figure like Kevin Potts

I think the secret is consistency to everything in life. I know that if I stick to low carb well then results tend to improve over a month. My last hba1c was dead on 6 which I was fairly happy with but its still in the prediabetic range so I'd be happier with a 5.something.

I also know from reading others' experiences that as weight shifts, bg comes down too so whilst weight isn't my first priority, it's still an important one.

Fasting is also key for me to bring the bg down so I'm sticking to alternate day fasts. I'm looking forward to August as we're away for five days and I'm planning on doing daily 24hr fasts, with just breakfast. I want to see if I can manage that and resist temptation. Have to be realistic too - I find summer holidays really hard to cope with as I feel trapped with being stuck with kids 24-7 on my own. (Tragic huh?! Having to look after my own kids during the summer !). Hopefully I'll be busy enough and engrossed with activities that I won't have time for treats!!

Pain doc told me my back would seriously benefit from extra weightloss. He suggested a loss of 30kg so I've got that number in my head as a target to hit by next spring. It would be nice to get off my pain meds....

I do miss my space but I'll get that back in a few years when they turn and don't want me near them!!

Got a better FBG today - 6.1.

Fast day today and I've woken up starving....ill try to eradicate that ASAP with a nice coffee!

Really tired. Have four more working days left, then it's lie in city for nearly two months. That's the best bit!
