Hi, I'm trying to put together a menu for myself that includes baked foods like cake and muffins etc... but it's really difficult
trying to figure out what substitutes I can use for things like vegtable oil, baking soda etc...
I also would like to be able to make a smoothie that tastes like banana mixed with chocolate but I have no idea what I could use instead of banana.
Im thinking I would most probably have to make my own chocolate using Stevia instead of sugar. So if someone could share a chocolate recipe, that would be great.

I only want to eat a meal if it has NO Sugar, and if possible, NO Sodium in it.
So with that in mind I was hoping users on the forum could share some recipes for the following meals. Thanks!

Chocolate Cake (Using Stevia)
Muffins
Brownies
Banana and Chocolate Smoothie

Curry sauce with rice
Soup
Vegeburgers

I was wondering if users could also recommend a online shop that sells a quality brand of vegeburger. I have read that quite a lot of vegeburgers
have ingrediants in them that are not that good for you're health, so suggestions of a well respected brand are appreciated. I'm also looking for a quality brand of muesli and yogurt.

Thanks!

Mike, why not try low carb high fat? See www.dietdoctor.com
I would drop the rice.
The diet is simple. Ditch starchy carbs and you can up your fat content. Fat tastes better than carbs, you need less of it to feel full, it tastes nicer and you lose weight. I have lost 2 stone 11lbs so far!
Here is my recipe for chocolate mug cake. It tastes like normal sponge pudding and I have it with double cream! Yum!
50g butter, melted in the microwave
3tbsp ground almonds
1 1/5 tbsp sweetner
1/4 tsp vanilla
Pinch of salt
1 egg
1 tbsp cocoa powder
1/2 tsp baking powder
2 squares 70% dark flavoured with orange chocolate
Or
1 square 90% chocolate, chopped
2 tbsp pecans

Melt the butter in a bowl, add remaining ingredients and divide into 2 mugs and nuke for 1 minute per mug.
I use truvia as a sweetner!

Ummm you can not have low carb no sugar as carbs are sugars....ditto to Scandi also most food has natural salt and minerals.

You need to sort your diet out still eating cakes no matter what is not healthy as a treat fine but you seem to have a bit of a problem there.

Why are you telling me this? Am suggesting that op tries LCHF and giving recipe for choc mug cake. Stop trying to confuse me @Mud Island Dweller! You know I'm old and blonde and easily confused. That's why I'm not allowed tea breaks at work! It takes too long to retrain me afterwards! :hilarious:

It was the ditto scandi. How are you anyway? I am considering going for a walk! Early I know but I've got stacks of energy. Might have coffee then consider getting up. Hungry and could just eat a chocolate croissant - lucky that there are non in house. I am a disaster at brekkies but good at the rest of the food. Or how about an egg mcmuffin! Arrgghhh! All this talk of food is making me hungry!

The ditto was agreeing with your LCHF comment l then did my usuall and went off at a tangent, made sense to me :hilarious:
Just had 2 fried eggs and couple slices of grilled bacon.

Relaxing this weekend as loads to do during the coming week so girding my loins". We have boot camp later today and the rest of the day is for relaxing until l have another stupid idea that requires energy. Yesterday the relaxing day included a 100 mile trip to Trentfield to have a mooch followed by 3 major re-pots of the horseradish and 2 trees that had outgrown their containers...don't like doing that in summer but was little choice one container was broken. And cleaned the shed out.

How can anyone eat a macdonalds is past me ...... :hungover:

Now you're just being mean! Describing your brekkie to a starving woman! I've eaten a chunk of cheese as hubbie is snoring away. Love first coffee of day and having chat on this forum. I wouldn't want a McDonald's egg mcmuffin and hash brown all the time but it is a nice brekkie occasionally. You should try it! :D

My other half just gone back to bed after making me a second coffee said wake him up in time for boot camp.

I honestly don't know why I like egg mcmuffins and hash browns! I also like their fillet of fish, the whippy ice cream, their choccie brownies and blueberry muffins and their iced mochachinos too, although I haven't had any since I was diagnosed. Apart from the egg mcmuffin and hash brown. Hubbie and kids went camping and wanted lift back immediately. Hadn't been shopping so not much in so stopped via McDonald's. Total guilty pleasure. Just shows how addictive carbs are as I could've quite happily eaten one earlier but am ok now I've had the cheese.

Ooooh, is this the naughty confessions page? ;)

I'm just back from an epic road trip and didn't have much time to stop and eat so had a good fried breakfast in the hotel yesterday morning, smuggled a few individually wrapped cheeses out from the breakfast buffet table to snack on and drove 400+ miles, from the South Cotswolds to Birmingham and back to Bournemouth, stopping only for a Starbucks strawberries and cream frappacino. Anyone tried these? They are divine. I treated it as food, but was a bit worried about the strawberry syrup but its very little really compared to the whipped cream, ice and milk used.

Tested bs on arrival home at 9pm last night and was surprised to be only 7.4.

I plan to go back for more........

I lied. I made two stops therefore I had two Starbucks Strawberries and Cream frappacinos. Its the Starbucks Drive-Thru's which get me....:)

Funnily enough I was just talking about you to my lazy hubbie who still hasn't got up and cooked brekkie. I am hopeless at fry ups. He is awesome! We were talking about weight loss on LCHF and saying how it doesn't suit some people. He thinks I should have lost more than I have and I was wondering about vit d - am being tested on Monday! He lost over 2 stone in 4 months and is now at his perfect weight! Grr! Not that he doesn't take every opportunity to tell me. But he does! Strawberry frappacino sounds lovely!

Mike,

I don't eat the type of diet that the earlier posters on this thread do. (it seems to have changed since I started writing)

I eat moderate amounts of carbohydrate but I don't normally eat any added sugar.
I've been tracking the major nutrients in my diet for the last couple of weeks.
Yesterday, I ate 29g of sugar (out of 127g carb so relatively low in carbs but many more than some people . Sounds a lot, but where did it come from?

Some of the sugar came from milk, some came from tomatoes , some from cauliflower , some from broccoli and some from raspberries there was even some sugar in the cucumber and radishes.
Sodium came from a wider variety of foods including all the veg (60mg from my cauli), meat, cheese and milk. My sodium intake for the day though was nor high.

Even the recipe above, when analysed here contains 8.8g of sugar and 260mg sodium.(total recipe)

So basically I'm suggesting that it is impossible to eat a diet with absolutely no sugar unless you eat nothing but meat and cheese. You also can't avoid sodium. If you are on a low sodium diet then it may be a good idea to try recording how much you eat using one of the online trackers. This is what the government suggests for a low sodium diet. http://healthfinder.gov/HealthTopic...s/heart-health/low-sodium-foods-shopping-list

You can find lots of low carb/low sodium, low whatever recipes on the internet. I think that in many cases, they are going to be substituting one thing that you consider bad for another that may be bad in other ways.
Keep cakes and muffins for occasional treats, they aren't really a necessary part of a diet.

My weight loss is definitely slower than yours and I do get despondent, but my general overall health has improved to such an extent that I'm sticking with LCHF. I do take a Vit D supplement which I was taking before staring LCHF and my levels were tested after taking it for the 1st month and were in range, although I can't remember what they were.

Since I haven't been able to get my fasting levels down in 6 months, I suspect I have a more sinister problem with my liver function and am waiting for a liver scan but otherwise I'm treating any weight loss as a bonus, rather than my primary goal.

Good luck with your test tomorrow and well done to both of you for your amazing weight joint weight loss.

Sorry to have hijacked the thread....

Mike,
You're making things V difficult for yourself
Most pre- prepared foods are filled with added carbs/sodium etc.
IMHO aim for a low carb diet as others have suggested and try to keep your Na low (don't add salt!)
Ditch bananas and starchy carbs, make your own vegeburgers if you must!
Lose the muesli (Carbs!)
Check the recipes on here for low carb cakes/brownies/muffins
