Also keep meaning to make these cheesy spinach puffs which look good for snacks!

16 oz. package frozen spinach, thawed and drained
1 cup almond flour
4 Tbsp salted butter, melted
2 large eggs
1/3 cup grated parmesan cheese
1/3 cup crumbled feta cheese
1/4 tsp ground nutmeg
1 tsp kosher salt
1/4 tsp ground black pepper
1 tsp garlic powder
1 Tbsp onion powder
3 Tbsp heavy whipping cream

Preparation:
Squeeze the spinach in a paper towel to remove as much of the moisture as possible. Add all of the ingredients to a food processor or blender and puree until smooth. Chill for 15 minutes (or longer). Form into 1 inch balls and place on a cookie sheet. Bake at 350 degrees (F) for 12 minutes. Don’t bake too long or they’ll dry out!

Serves: makes about 30 puffs

Sorry the measurements are all American units. Has come from website www.asweetlife.org which has quite a few interesting looking recipes if you are looking for inspiration!:)

Have discovered Lloyd Grossman Express carbonara sauce in a pouch. 6.4g carbs per pouch which is 150g. This eve I baked 2 large portobello mushrooms so they were cooked. Then fried broccoli, courgette, onion, bacon and cauliflower rice, added the carbonara sauce and put on top of the baked mushrooms. Grated some parmesan over the top. Had intended to put it under the grill but didn't bother - didn't need it. Was very tasty.

Just saw this very simple breakfast/brunch idea in a Tesco video on Facebook. Half and stone an avacado, place an egg in the stone hollow and bake. Simple, yummy, low carb with good fats.

Bacon - cheeseburger casserole.
600g beef mince
100g streaky bacon
2 eggs
60ml heavy cream
2cups of spinach roughly chopped
1 tsp garlic crushed
2 tsp paprika
2 tbsp mayo
2 tsp dijon mustard
100g tasty cheddar cheese - grated
1 tbsp tomato paste

Method

1, Preheat oven 350F or 180C. Grease a roasting dish with butter
Or Coconut oil.
2, fry bacon until crispy, set aside to cool.
3 in the same pan fry garlic and paprika, then add mince, cook until brown
And fragrant.
4, season with salt and pepper. Remove mince from heat
5, in a large mixing bowl beat the eggs, with the cream mayo mustard and half
The grated cheese.
6, chop the bacon into bits and stir into the mince. Spread beef mixture in roasting
Tin, then sprinkle spinach on top.
7, tip the egg mixture on top as evenly as you can.
8, sprinkle with remaining cheese, along with blobs of the tomato paste.
9, Bake for 45 - 50 mins until middle is cooked.

Serves 4
Approx 670 calories. 4g of carbs. 56g of fat. 44g of protein.

for any salad lovers. i tried this and its really nice.

chop up into slices brussel sprouts. with kale leaves. spring or ordinary onions.some sunflower or pumpkins seeds.

dressing. english or dijon mustard.olive oil.cider vinegar.salt and pepper.lemon.

didnt really measure anything just chopped it all up and put in a bowl and ate the lot !!

Cold aubergine caponata

Love this dish, it's based on Carluccio's recipe for caponata, but he calls it a veg stew, while I do it more like a cold side dish.

-1k aubergines chopped in 1inch cubes
-4 stalks celery chopped , leaves and all
-1 large onion chopped
-45gr tomato purée
-1 tbsp sugar (do as you see fit here)
-1 tbsp white vinegar
-1 tbs capers soaked in water for 10m
-20 olives pitted


Blanche onion and celery in salty boiling water for a couple minutes and drain.
Fry aubergines until tender and brown, probably best done in batches.
Add all ingredients to the pan and cover, cook for 15min , uncover towards the end, add a couple of spoons of water if it runs dry. I let it cool afterwards and it's fantastic as a side dish, yum.

Chunky guacamole


- ripe avocado
- small onion, finely chopped
- good handful of coriander leaves, coarsely chopped
- green or red chilli - choose to taste, but I tend to go for the larger fleshier ones with a bit of bite
- lime, juiced

Coarsely mash the avocado with a fork.
Mix in chopped onion, chilli, chopped coriander.
Add juice from the lime - enough to give the mix bite, not so much that is goes to mush.

Might this go well with oopsie bread?

Edit: around the juice of half a lime is about right for one medium avocado. It's important to keep the mix coarse. So you get a different flavour/sensation in different spots in the mix, rather than an averaging amalgam. Add a tiny bit of coarse salt crystal (crushed between fingers) for another source of 'bite'.
I tried this, this week for the first time, as a breakfast dish, and it worked really well.

Do you like curry? I love Indian food. Couple of points that you may already know; onions need slow cooking to brown, dry spices and tomato paste need to be cooked off before other stuff is added. I also like to use ghee (clarified butter) and if you don't fancy making it for yourself, visit your local asian supermarket or buy the Lurpak stuff from supermarkets.

Looking at what I have at home today includes; half a cauliflower, a couple of carrots, 2 small tomatoes a bit of celery and my store cupboard of spices and usual stuff. So, a vegetable curry.

Here are the ingredients that I had (spice amounts are to suite me but I think you will find them OK). I have no idea how many carbs are in this but can't be much.
  • couple of tablespoons of ghee or oil.
  • 1 l onion, finely diced
  • 4 cloves garlic, chopped fine
  • a thumb size piece fresh ginger, peeled and finely grated
  • 2 tsp. ground coriander
  • 11/2 tsp. ground cumin
  • 3/4 tsp. ground turmeric
  • 1/2 tsp. cayenne (or a bit more if, like me, you like it a little spicy)
  • 1Tbs. tomato paste
  • 2 or 3 cups of stock - I use my own home made beef broth but whatever you fancy
  • a big splodge of natural greek yogurt
  • One chunk of cinnamon stick about 3 inches
  • sea salt and freshly ground black pepper
  • cauliflower, broken into 1-1/2-inch florets
  • 2 tomatoes, cored, seeded, and coarsely chopped
  • 2 carrots, peeled and cut into 1/2-inch-thick rounds (I split mine lengthways first)
  • a few squares of frozen spinach or a handful of fresh if you like.
  • juice from 1/2 a lime and the grated zest
  • handful of chopped fresh coriander

In your pot, heat the ghee or oil over medium-high heat. Add the onion and cook, stirring occasionally, until it starts to change colour (3 or 4 minutes will be about right). Reduce the heat to medium (or medium low if necessary) and cook slowly until the onion is richly browned, about another 10 minutes or more. Add the garlic and ginger; cook, stirring, for 1 minute to blend the flavors. Add the coriander, cumin, turmeric, and cayenne; stir for 30 seconds to toast the spices. Add the tomato paste and stir until well blended with the aromatics, about 1 minute.

Add the broth/stock, cinnamon stick, 1 tsp. salt, and 1/4 tsp. pepper and bring to a boil. Reduce the heat to medium low or low and simmer for 10 minutes..

Add the cauliflower, tomatoes, celery and carrots. Raise the heat to medium high and return to a boil. Reduce the heat to medium low, cover, and simmer until the vegetables are tender, 10 to 15 minutes. Fish out the cinnamon stick.

Stir in the spinach, lime juice, and zest; cook for about 3 minutes more. Season to taste with salt. Serve with fresh chopped coriander and a really big dollop of yogurt.

This recipe is pinched from elsewhere. But it's really good
and I wanted to share with you. X
Roasted Cauliflower with garlic lemon juice & olive oil.
6 cups of cauliflower florets smallish in size.
1/4 cup of X Virgin olive oil.
2 Tbsp lemon juice
1 Tbsp sliced garlic
1 Tsp salt
1/2 Tsp freshly ground black pepper.
2 Tbsp grated Parmesan
2 Tbsp fresh chopped chives.

1, Preheat oven 200c Gas 6 400f
2, Place florets in a roasting tin and drizzle olive oil
Over the florets. Use more if needed.
3, Season with salt/Pepper sliced garlic and lemon juice.
4, Put into the oven for 15 mins stirring occasionally.
5, After the 15 mins are up, take out of the oven and
Sprinkle Parmesan and chives over the top.
6, Put back into the oven for a further 5 mins
Serve immediately .

This dish was seriously nice and had it over 2 nights.
Low carb shepherds pie.

800 grams of mince ( I used lamb)
2tsp of garlic powder or use fresh minced
2 tsp of onion powder
1 tsp of red pepper flakes ( I'm assuming this is chilli flakes)
1small onion diced
2 kilo packets of frozen cauliflower florets.
1-8oz cream cheese ( now I used half of a 250g tub)
2cups do shredded strong cheese
Bacon crumbles ~ optional. ( now I used pancetta. Half a packet)

1, cook the mince adding garlic onion powder and chilli flakes
In a separate pan fry the pancetta in a little oil of your choice.
2, In a large pan boil up your frozen cauliflower for about 15 mins
Until soft. Then drain well.
3, add cream cheese and half the grated cheese and the bacon/pancetta
Mixing well.
Spread a little of the cauliflower mixture on the bottom of a 9x13 dish
Then layer the mince mixture over the cauliflower. Then add the
Remaining cauliflower mixture over the meat mixture.
Sprinkle over the remaining cheese and cook in a preheated oven
180c for about 20~30 mins.

Just made this for dinner: Eggs in Purgatory (by Nigella Lawson)

Ingredients:
  • 1 tablespoon olive oil
  • 1 small clove garlic (peeled and crushed or grated)
  • ¼ teaspoon dried chilli flakes (more if you like)
  • 1 x 400 grams can chopped tomatoes - or whole ones and bash about a bit.
  • ½ teaspoon sea salt flakes (or to taste)
  • 1 large egg (I used 2 because I'm living on the edge)
  • 2 teaspoons grated parmesan (or more as needed)
  • 1 splash of chilli oil (optional to serve)
  • half of one of those Lidel triangular bread rolls.
Method:
  1. Pour the olive oil into a frying pan, then add the crushed garlic and chilli flakes and put the pan over a medium heat, stirring, for 1 minute.
  2. Tip in the tomatoes, stir in the salt, and let it come to a bubble. It’s got to be hot enough to poach an egg in.
  3. Crack in the egg (or eggs), sprinkle the Parmesan over it, leaving some of the yellow yolk still exposed, and partially cover with a lid. Let it bubble for 5 minutes or so, by which time the white should be set and the yolk still runny, but keep an eye on it.
  4. Remove from the heat and serve. If you like sprinkle with more Parmesan and some chilli oil. Eat with some low carb bread to mop things up - or use a spoon - or lick the plate.

Stir fry bitter melon with eggs.
I recently posted a soup recipe containing bitter melon which is reportedly good for helping to lower blood sugars (see http://www.diabetes.co.uk/forum/threads/soups-and-stews-please.65909/page-4#post-891371).

Here is a stir fry recipe: Stir fry bitter melon with eggs (the pork is optional).

Depending on how much you want to make, here are amounts for a single portion:
Chunk of bitter melon - about 4 inches or 3 small ones.
garlic - 1 clove chopped fine (I rub mine with a pinch of salt to make a paste)
50g or so of pork mince - optional
2 eggs
1 tbsp soy sauce (or more to taste)
1 tbsp of oil and some water to keep your pan moist.

Tip: in many Thai recipes the pork mince is pounded in a pestle and mortar to get a meaty paste especially if using for stuffing vegetables or making meatballs etc - I would do similar for this recipe.

1. A chunk of bitter melon. de-seed and finely chopped
2. heat up pan, add oil. Throw in the pork and slices of bitter melon. stir fry, adding a splash of water now and then if needed.
3. When the bitter melon has softened, throw in the garlic and stir in.
4. Add soy sauce and stir in.
5. crack in your eggs and stir everything together.
6. Serve

Grilled Aubergine and Goats Cheese Salad


Serves 2
Ingredients:
1 aubergine (about 300g)
1 tbsp olive oil
50g goat's cheese, chopped
1/2 lemon, zest and juice
100g sun-dried or fresh tomatoes
1 clove garlic, crushed
1/2 400g tin of chick peas
25g mint, torn

Method:
1. Preheat grill to high.
2. Cut the aubergines into diagonal slices about 2cm thick. Score on both sides and brush with
oil. Grill on a tray for 20 minutes, turning halfway through.
3. Scatter the goat's cheese and lemon zest over the aubergines. Briefly grill until golden.
4. Chop the tomatoes and mix with the lemon juice and garlic. Spread the chick peas over a
large serving plate and mash a little with the back of a fork.
5. Spoon the dressing over the chickpeas. Top with the aubergines and half the mint. Toss
together. Sprinkle with the remaining mint and serve.

If you do not have a grill, you can roast the aubergines in a
hot oven, gas mark 7 or 200C for 20 minutes.
