I add it to salads so it always comes "dressed" with oil, vinegar and plenty of fibre which may help blunt a spike? It would, yes. But it's still close to the amount of carbs in spaghetti and rice, which weigh much more cooked than uncooked.That's 100 g uncooked though I think?? Correct me if I'm wrong.
I cook mine like rice and it fluffs up....100 g would end up weighing about 300 g cooked.
I think portion size is key.
