Hi. I have just been diagnosed as prediabetic. and so will have to change my diet. I have to take sandwiches to work to eat there. My question is type of bread is best (I'm a fussy eater).

Any reason it has to be sandwiches rather than some other of packed lunch?
Do you have access to a microwave or kettle?

I ask because generally bread is not our friend as it’s high carb (any colour or type and including wraps and rolls too). There are a few lower (but not low) versions out there in supermarkets mostly Hilo in Sainsbury’s and maybe Tesco and the livelife from Waitrose. They are tiny slices and not cheap. Online you can get lower carb options from keto retailers but again not cheap. There’s also the option of making your own low carb bread if you fancy that. All the properly low carb choices use something other than grain flour so the taste and texture is different. You may like it but it is different.

In general any grain or starch based options are to be treated with caution as well as sugary stuff, including anything made from flour or cereal. If you can get a meter and test for a while it’ll show you what your personal reaction is to the various

Hello @makera and welcome.

With pre-diabetes you have the opportunity to gain control of your blood glucose levels and avoid progressing to diabetes levels. It is even possible to get those levels back to below prediabetes.

Many of our members have achieved success through reducing the amount of carbohydrate in their diet, and that does include reducing or even eliminating some of the high carb foods completely. That does include bread.

As toast is my go to comfort food, I can identify with you still wanting to have bread. I was bereft until I was guided by some helpful members to the low carb breads available to purchase online. Some companies used by members :

It could also help if you were to test your blood glucose levels yourself with a meter and test strips before eating and again two hours later. keep records of both what you have eaten and the levels so you can see how various foids affect those levels.

thanks for that. yes can use a microwave but as i said earlier i'm a fussy eater and don't like a lot of "good" foods but will take any advice i can get. Thanks

It’s hard to make suggestions without knowing what you like but I would take a lunchbox with a mixture of some of the following cheeses, ham, continental cooked meats, eggs, olives, tomatoes, cucumber, tuna, smoked salmon, cold cooked salmon. I might make tuna mayo, or egg mayo, and take salad with it. Good quality cold sausages maybe. Effectively think of sandwich fillings, more of them but without the bread.

Just a side note on the topic of sandwich fillers - I've not touched bread all year (may be a reward if I get to remission), but I've been hankering for Mayo regardless, and I keep picking them up, reading all the seed oils in the ingredients, and putting them down again...

But I've discovered a range of avocado oil mayo which is delicious - the week that I was finally going to try making it myself... and really just the basic ingredients you would use yourself, and no seed oils or modified starch, not cheap but a bit of a revelation....

Make chaffles and use in place of bread. I'd avoid all the UPF substitutes.

I use Danish by Warburton 67cal per slice (like nimble) or Sainsbury's pittas 137cal. I also recommend reading prof. Roy Taylor's book on reversing type 2 diabetes and life without diabetes (all proceeds go to diabetes uk). Frightening read but very effective. I am now in remission.

If you like you may prepare a low fat salad and take in a plastic container. As you ate a fussy eater it is not easy to suggest cucumber, tomatoes, raddish, grated carrots, Spinash, lettuce if you like very thinly sliced green, yellow and red peppers. Whatever protein you like may be add to the salad e.g tuna chicken meat ham prawns etc You do not need bread with a salad! But you can add croutons prepared by yourself.

I found that seeded breads hardly made any difference to my post prandial blood glucose rises.
For anybody cutting carbohydrates (to reduce BG rises) it's important not to fear fat, even saturated fat because fat is satiating when eaten with protein. It also helps replace the calories lost from cutting carbohydrates, which is important for those who don't wish to feel starved.
For a Type 2 or presumed pre-diabetic (as opposed to a Type 1) fat produces no noticeable BG rise at all and eating it helps transition the body into a fat adapted state in which body fat can be used as fuel.

I use Nimble or Danish breads low in salt and sugar, because I love sandwiches.

Assuming your sandwich is your light meal of the day, consider eating your main meal at lunch and rather having your ‘light’ meal early evening. Sadly, this means taking a lunchbox to work (as stated earlier), but it’s best, so as to avoid sleeping on a heavy stomach. As for bread choices, I find that seeded whole wheat low Gi bread works best be me, but I alternate with other low Gi bread for variety. ‘But not for my main meal of the day’. A wholesome low carb main meal is very important.

All normal bread is way too much carb for my ~20g/day regime. I don't find there's any way round it, other than just not eating it. None of the "tricks" work.

I've used SRSLY for bread substitutes for a few years now. It's not perfect by any means but it will do very well for sandwiches, and it toasts well. Only 3g carb per roll. I also order their wraps which work OK but are a little more carby at about 6g/wrap.

They also do a cinnamony "not cross bun" which is around 5-6g carb - with plenty of butter, it goes really well.

Cut back to one slice of bread for the sandwich. Make it a good quality bread, perhaps a sourdough, whole grain, flax ..

Consider other meals, home made stews, ( i make mine without potatoes) chili, more meat than beans, a cold chicken drumstick.

Round out the meal with lots of veggies and perhaps a plain yogurt v-8 juice?

Hi, my wife makes carnivore bread, if you insist/persist on eating bread that might be something for you. 1) You could boil some eggs and bake bacon cut into very small pieces, add all in a bowl with a little homemade mayonnaise or melted butter. Take that for lunch? 2) Or, bake some ground beef and mix that with a couple of boiled eggs, again mixed all with a bit of homemade mayo/melted butter. 3) Make keto egg muffins with added bacon bits or some ground beef. All these suggestions add spices to taste. All these suggestions can be eaten cold. Good luck with your choices. Keep Good, keep well, stay healthy! your carnivore bread sounds very interesting, is it your wife’s own recipe? If not have you a link to the recipe, or perhaps you’d be willing to share the recipe in the thread as I’m sure lots of our members would be very interested :)

I know it doesn't work for everyone but for me I've found very slow raise in BG when having sourdough, I occasionally got the seeded sourdough from the Co-Op, it's great toasted and the slices are a little bigger than average so you don't need more than one.

The local Polish grocery has black bread - labelled protein bread, which is low carb - I get it once in a while to eat with kippers. It freezes well but that might not be necessary, it keeps a long time.
