Counting carbs isn't any more difficult than counting calories. Just the count the Total Carbs. Ignore the "of which is sugar".
The amount depends on the state of your pancreas. Lots of people here would say that about 100g of carbohydrate a day would be a sensible total. Why don't you try that and see how it helps your BG readings? You might be able to get away with a bit more or a bit less, but 100g a day would probably be a lot better than what you're doing now...
