Type 2s: What have you eaten today?

Evening all

Yesterday:

B: Two poached eggs topped with a knob of butter, slices of avocado, seasoned with black pepper and a wedge of Berkswell ewe's milk cheese.
Water to swallow tablets
Espresso.

L: Packed lunch made with leftover cauliflower 'tabbouleh', lettuce, Romano peppers, celery sticks and cherry tomatoes with a dollop of homemade mayonnaise for dipping.
Almonds and hazelnuts.
Strawberries to round off lunch.
Water to drink.

D: Smoked salmon and cream cheese salad made with lettuce, fennel fronds, celery, vine tomatoes and mustard cress, dressed with olive oil and a touch of lemon juice, topped with toasted pine nuts.
Water to swallow tablets.
 
Evening all

The brief English asparagus season was slow to get going this year and will soon come to an end, so I'm making the most of it while it lasts.

Yesterday:

B: Two poached eggs and scallops topped with chopped, flat-leaf parsley, asparagus spears with a generous knob of butter, all seasoned with one or two grindings of black pepper.
Water to swallow tablets.
Espresso.

L: Tuna steaks rolled in chopped celery and oregano, baked with red peppers and aubergines, moistened with cream and topped with grated Cheddar cheese. Salad using watercress, chicory, avocado, radishes, salad onions and black olives, dressed with an olive oil, garlic, oregano and balsamic vinaigrette and topped with macaadamia nuts roasted in butter.
Skipped pudding,
Water to drink.

D Seafood salad made with tiger prawns and mussels, lettuce, fennel, Romano peppers, celery, cherry tomatoes, salad onions with aioli for dipping and topped with toasted pumpkin seeds.
Water to swallow tablets.
 
Evening all

I revel in food preparation and cooking with fresh garden herbs. (Not that there's anything wrong with dried herbs, but they're not quite the same). As you pick over freshly cut sprigs, their fragrance wafts up from the chopping board. Lift the lid of your food processor and the aromatic scent of herbs fill the kitchen. Then you start to cook and the aromas mature and change again. These pleasant sensations have all but replaced the ritual tasting that I once indulged in while cooking.

In Winter, I rely heavily on rosemary and thyme, but at this time of year we're spoiled for choice. Yesterday we enjoyed our first French tarragon of the year at lunchtime. Today, I harvested the first chervil for supper.

L: Baked whole sea bass, belly stuffed with French tarragon and garlic, drizzled with olive oil, accompanied by asparagus spears with butter and a medley of broccoli, leeks, and red peppers with garlic.
Low carb pudding made with milled flax seeds, homemade granola, unsweetened almond milk and cream.
Water to drink.

D: Berkswell ewe's milk cheese and salad made with lettuce, Romano peppers, celery, salad onions, cherry tomatoes and black olives, a dollop of homemade mayonnaise with garlic and mint for dipping, topped with pecan halves and macadamia nuts roasted in butter

D: Seafood salad made with brown shrimps and mussels, lettuce, fennel fronds, Romano peppers, celery, cherry tomatoes, mung bean sprouts, chervil and salad onions, with a dollop aioli for dipping, topped with toasted sunflower and pumpkin seeds.
Water to swallow tablets.

Mixed green salad made with sweet cicely, chicory, celery, fennel bulb and fronds, green peppers, salad onions and flat leaf parsley, dressed with olive oil, garlic and a touch of lemon juice, topped with toasted almonds.
Skipped pud.
Water to drink.

D Seafood salad using king prawns, mussels, lettuce, cherry tomatoes, celery, Romano peppers, chervil, olives and salad onions, dressed with an olive oil, balsamic and garlic vinaigrette, topped with toasted pistachios.

Low carb pudding using milled flax seeds, home made granola, unsweetened almond milk and cream.

D: Seafood salad made with brown shrimps and mussels, lettuce, fennel fronds, cherry tomatoes, olives, Romano peppers, salad onions and mustard cress, with a dollop of homemade mayonnaise for dipping, topped with toasted sunflower and pumpkin seeds.

I had the normal bacon eggs and that jazz this morning…tonight I had pan fried mackerel with cauliflower rice, baby spinach, carrots and peas…followed by strawberries and lashings of cream. Who says we can’t have a treat on keto…

Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa.
Tea at ILs: cold meat, cheese and salad buffet followed by one Jaffa cake!

Absolutely! I'm always on the lookout for new, mouthwatering recipes and this forum provides lots of inspiration. It's important to enjoy our low-carb lifestyle, otherwise we'd never stick to it, would we?

More often than not, lunch is our main meal of the day. We find we sleep better at night following a light supper.

Yesterday's plan included our favourite Sunday lunch-for-two whenever there is only my husband and myself to consider; baked whole sea bass, belly stuffed with garden herbs and garlic, drizzled with olive oil and accompanied by vegetables in season.
 
Yesterday I had two boiled eggs for breakfast. Then throughout the day keto dark chocolate three pieces, dairylea dunkers, 2 cheese strings, a mini cheddar cheese and a baby bell. Some nuts. Was hungry today. Evening meal salmon with prawn stir fry and two small apples.
