Type 2s: What have you eaten today?

Yes I was. The reactions were inconsistent and one day the same thing bothered me then didn't the next time!!
I eventually quit as I wasn't learning anything from it.
And it got distressing seeing that so few things were ok.
The inconsistency alone is valuable information @cdpm. It's not typical of food intolerance. Perhaps consider requesting referral to a gastroenterologist for investigations.
 
Evening all

Tuesday:

B: Two poached eggs smothered with butter and avocado seasoned with black pepper plus a wedge of Teifi (pronounced Tavey)
Water to swallow tablet.
Espresso.

L: Wild Alaskan salmon baked with calabrese, chestnut mushrooms, double cream and lemon verbena.
Steamed samphire and mangetout with a knob of butter.
Water to drink.
Skipped pud.

D Seafood salad using tiger prawns, brown shrimps, rocket, baby plum tomatoes, celery, Romano peppers, cucumber, Halkidiki olives and Welsh onions, dressed with an olive oil, balsamic and garlic vinaigrette, topped with pecan halves.
Water to wash down tablets.
 
Evening all

Yesterday:

B: Two poached eggs with a knob of butter, avocado and 4 tiger prawns seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Courgetti alla puttanesca made with anchovies, Kalamata olives, capers, canned tomatoes, garlic, olive oil, butter, parsley and spiralised courgettes.
Braised cavolo nero with garlic and toasted almonds.
Water to drink.

D: Seafood salad made with brown shrimps and mussels, lettuce, Romano peppers, celery, baby plum tomatoes, Halkidiki olives and salad onions, with a dollop of home-made aioli for dipping, topped with pecan halves.
Water to wash down tablets.
 
Early meal with visitors.
Family made.

1 round flat breakfast sausage patty
1 English muffin
1 slice thin fake cheese
1 egg
1 hash brown

All chopped very tiny.

L: Walnut and mushroom nut roast using onions, eggs and flax 'egg', (no breadcrumbs) garlic, vegetable stock and rosemary.
Vegetarian gravy made with vegetable stock, rosemary and garlic.
Steamed purple sprouting broccoli smothered with butter.
Carrots cut on the diagonal, onions and apple peel sautéed in butter.
Water to drink.
Skipped pud.

D: Seafood salad made with mussels and brown shrimps, lettuce, Romano peppers, celery, baby plum tomatoes, Kalamata olives, oregano and salad onions, with a dollop of home-made aioli for dipping, topped with roasted macadamia nuts..
Water to wash down tablets.
 
I wouldn't recommend whole flaxseeds @cdpm. They are usually sold ready ground. Once milled, they are nutritious and diabetic-friendly. I use ground flaxseeds, otherwise known as linseeds, as a substitute for breadcrumbs in all manner of recipes.
Thursday's lunch was a classic example @cdpm where ground flaxseeds are used instead of the customary breadcrumbs.

L. Walnut and mushroom roast using onions, eggs and flax 'egg', (customary breadcrumbs omitted) garlic, vegetable stock and rosemary.

Let me know if you would like me to post the recipe for this vegetarian dish.

Water to swallow tablet.
Double espresso.

L: Packed lunch made with leftover walnut and mushroom roast.
Celery sticks and baby plum tomatoes with lettuce cups for scooping and a dollop of home-made mayonnaise for dipping.
Prawns and brown shrimps.
Almonds and hazelnuts.
Water to drink.

Mid-afternoon: black filter coffee

D: Smoked salmon and cream cheese salad made with rocket, celery, baby plum tomatoes, Welsh onions, Halkidiki olives and Romano peppers, dressed with olive oil, lemon verbena and a touch of lemon juice, topped with pistachios.
Water to wash down tablets.
