Type 2s: What have you eaten today?

Evening all

Yesterday:

B: Two poached eggs with a knob of butter and avocado, seasoned with black pepper plus a wedge of Gorwydd Caerphilly
Water to swallow tablet.
Double espresso.

L: Packed lunch made with leftover ceviche.
Chicory boats for scooping, Romano peppers, celery sticks and baby plum tomatoes with a dollop of home-made mayonnaise for dipping.
Tiger prawns.
Almonds, hazelnuts and pecans.
Water to drink.
Strawberries to round off lunch.

Mid-afternoon: black filter coffee

D: Smoked salmon and cream cheese salad made with lettuce, fennel fronds, celery, baby plum tomatoes, Welsh onions and Romano peppers, dressed with olive oil and a touch of lemon juice, topped with toasted pumpkin seeds.
Water to wash down tablets.

Evening all

Cooler yesterday thanks to a change in wind direction. Making the most of the English asparagus season which is about to end for another year.

Saturday:

B: Two poached eggs and scallops, asparagus spears smothered with butter, all seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine.
Tuna steaks rolled in finely chopped celery and oregano, baked with aubergines and red bell peppers, moistened with double cream and topped with extra mature Cheddar cheese.
Steamed French beans and mangetout with a knob of butter.
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Seafood salad made with king prawns and brown shrimps, avocado, baby plum tomatoes, Welsh onions and Kalamata olives with home-made aioli for dipping and topped with roasted macadamia nuts.
Water to wash down tablets

Making the most of the English asparagus season which is about to end for another year.
Sunday's weather was certainly cooler here in London, thanks to a change in wind direction.

Sunday:

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and baby plum tomatoes, all seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine.
Baked whole sea bass, belly stuffed with sprigs of tarragon and garlic, drizzled with olive oil.
Steamed asparagus spears topped with a knob of butter.
Baked calabrese, cauliflower, leeks, garlic and bell peppers.
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Salad made with anchovy fillets, eggs, avocado, lettuce, Padrón chillies, Welsh onions, lemon verbena and a touch of lemon juice, with a dollop of home-made aioli for dipping, topped with pecan halves.
Water to wash down tablets.

Espresso.

L: Courgetti alla carbonara made with chestnut mushrooms, eggs, double cream, Parmesan cheese, nutmeg, butter and spiralised courgettes, topped with extra Parmesan and flat-leaf parsley.
Steamed French beans and mangetout smothered with butter.
Water to drink.
Skipped pud.

D: Seafood salad made with brown shrimps, mussels, shredded red cabbage, apple peel, celery, thyme and baby plum tomatoes with a dollop of aioli for dipping, topped with roasted macadamia nuts.
Water to wash down tablets.
 
Some sort of family made mush.
I don't know the name.
It had shredded cheese, cottage cheese, refried beans, chicken, spices, onions, salsa sauce and green peppers.

Yes and I despair that it will ever heal (my gums). It's been 28 months now. Likely due to diabetes.
Yes that's a long time @cdpm. Unfortunately, your gums are vulnerable to injury when biting on foods and of course diabetes doesn't help the healing process.

Are you getting enough vitamin C and zinc?

Tuesday:

B: Two poached eggs smothered with butter and avocado seasoned with black pepper plus a wedge of Teifi (pronounced Tavey) an organic, unpasteurised cow's milk cheese from Wales
Water to swallow tablet.
Espresso.

L: Wild Alaskan salmon baked with calabrese, chestnut mushrooms, double cream and lemon verbena.
Steamed French beans and mangetout with a knob of butter.
Water to drink.
Skipped pud.

D Seafood salad using tiger prawns, brown shrimps, rocket, baby plum tomatoes, celery, Romano peppers, cucumber, Halkidiki olives, Welsh onions and flat-leaf parsley dressed with an olive oil, balsamic and garlic vinaigrette, topped with toasted pistachio nuts.
Water to wash down tablets.

I'm not sure. I don't eat fruit and rarely vegetables or bread/grains. I'm not sure what zinc is in. I always just hope my vitamin pill covers everything.

Zinc must be consumed through the diet @cdpm since the body does not naturally produce its own.

Richest food sources of zinc include meat, fish and seafood, also eggs and dairy produce.
Nuts supply zinc too.

Vitamin C is an important antioxidant that like zinc aides in wound healing.

Wednesday:

B: Two poached eggs topped with a knob of butter, avocado and tiger prawns seasoned with black pepper.
Water to swallow tablet.
Espresso.

L: Mushroom and spinach frittata made with grated Cheddar cheese, eggs, leeks, cream and oregano.
Mixed green salad of chicory, sweet cicely, celery and salad onions, dressed with an olive oil and balsamic vinaigrette, garlic and mint, topped with cashews roasted in butter.
Water to drink.

D: Crab salad made with lettuce, fennel fronds, cherry tomatoes and salad onions dressed with olive oil and a touch of lemon juice, parsley and garlic, topped with toasted sunflower and pumpkin seeds.
